Gluten and Dairy Free Cajun Cream Prawn Spaghetti

I’m writing this blog post in advance of a trip to Italy where I’m sure I’ll be enjoying lots of amazing gluten and dairy free pasta dishes.

This is a simple spaghetti dish with Cajun seasoned prawns in a tomato sauce with some dairy free cream.  I used Tesco FreeFrom spaghetti and Alpro dairy free cream to make this.

Gluten and Dairy Free Cajun Cream Prawn Spaghetti

serves / makes 4

Ingredients

  • 300g gluten free spaghetti
  • 1 tablespoon olive oil
  • 350g prawns
  • 1 onion, diced
  • 2 teaspoons cajun seasoning
  • 2 garlic cloves, crushed
  • 300g passata
  • 125ml dairy free cream
  • 2 teaspoons mixed herbs
  • salt and pepper for seasoning

Directions

  1. Bring a large pan of salted water to the boil and cook the spaghetti per the instructions on the packet
  2. In a large pan place the olive oil and garlic on a medium heat
  3. Add in the onion, prawns and cajun seasoning
  4. Saute for 5 minutes
  5. Add in the passata, cream, mixed herbs and season with salt and pepper
  6. Bring to the boil and simmer for 5 minutes
  7. Stir through the spaghetti and serve

Gluten and Dairy Free Mediterranean Prawn Rice

This recipe is the epitome of a simple but very tasty dinner idea.  You can make it even quicker if you want by using already prepped and cooked prawns and a pouch of microwavable rice.

The tomato rice is  full of flavour from the prawns, chorizo, onion, garlic and basil.  As always when buying chorizo double check the ingredients as some do contain milk but I’ve found I can easily find one without in most supermarkets.

Gluten and Dairy Free Mexican Hot Prawn Sandwich

I’ve recently discovered, and I’m loving, Schar’s gluten and dairy free panini rolls.  They are great for making hot sandwiches for a treat lunch or with some chips for dinner.

I’ve used a kind of Mexican fajita flavouring on the prawns and added in some Violife Cheese, mayo and salad leaves to finish off the sandwich.

Gluten and Dairy Free Mexican Hot Prawn Sandwich

Ingredients

 

  • 2 gluten and dairy free rolls, I used Schar’s Panini
  • 2 teaspoons dairy free mayonnaise
  • 300g prawns, shelled, cleaned and deveined
  • 1/2 teaspoon oregano
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon sugar
  • 1 teaspoon lime juice
  • 2 slices of dairy free cheese, I used Violife
  • handful of salad leaves

Method

  1. Preheat the oven to 180 oC
  2. Heat a little olive oil in a shallow pan
  3. Add the  to the oil with the oregano, cayenne pepper, sugar, cinnamon and lime juice
  4. Cook for five minutes on a medium heat
  5. Fill the rolls with the cheese and prawns
  6. Bake for 8 minutes
  7. Remove from the oven and allow to cool slightly
  8. Add some mayonnaise and salad into the sandwich
