Gluten and Dairy Free Potato Waffles

Hello everyone

Hope you have all had a great Monday – it’s the start of the working week for me and I’m always super organised.  Breakfast prepped, healthy packed lunch prepared, outfit for the next day ironed and looked out.  Unfortunately this doesn’t last much past Wednesday for me and by Thursday and Friday I’m pretty much in disorganised chaos.  Anyone else like that or is it just me?

It has been so cold today I’m really hoping it isn’t going to snow – when it snowed last year it took me about 4 hours to get home from work rather than the usual 14 minute train ride so fingers crossed it won’t be a repeat of that this year.

Tonight’s recipe is for a real kiddy favourite – potato waffles!  The best bit of the potato is always the crispy top you get from a dish like Shepard’s Pie – these waffles are all about the crispy bit with a lovely fluffy potato filling.  Perfect for a tasty lunch or as a side to any dinner or actually you could have these for breakfast with poached eggs and avocado.

Gluten and Dairy Free Perfect Roast Potatoes

Hello everyone

In my humble opinion roast potatoes are a must on the Christmas dinner plate.  A fair number of the shop bought potatoes contain wheat so I thought I would put together a quick recipe for how I make them.

As I know a number of you that follow my site are vegan as well I have made these with olive oil rather than goose or beef fat.

Gluten and Dairy Free Perfect Roast Potatoes

Gluten and Dairy Free Perfect Roast Potatoes

Serves 4

Ingredients

  • 1 kg peeled hand halved potatoes, I used King Edwards
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon rosemary

Directions

  1. Fill a large saucepan with water and the salt
  2. Bring to the boil and then add in the potatoes
  3. Par boil the potatoes for 10 minutes
  4. Drain away the water and return the potatoes to the saucepan for 1 minute to get rid of any moisture
  5. Preheat the oven to 200 oC
  6. Place the potatoes, olive oil, salt, paprika and rosemary in a bowl and mix until combined
  7. Place on baking sheet and bake in the oven for 20 minutes
  8. Turn the potatoes and return to the oven for another 20 minutes or until crisp and golden

Gluten and Dairy Free Loaded Fries

Serves 2

Ingredients

  • 400g frozen oven chips
  • 2 gluten free sausages, diced
  • 1 pepper, diced
  • large handful of dairy free cheese, grated
  • 2 spring onions, diced
  • 1 tablespoons dairy free mayonnaise
  • sprinkle of chilli flakes

Directions

  1. Cook the oven chips according to the instructions on the packet
  2. In a shallow pan, over a medium heat, cook the sausages and peppers for about 8 minutes
  3. Place the chips into a heat-proof serving bowl
  4. Top with the sausages, peppers and grated cheese
  5. Return to the oven for 5 minutes
  6. Top with the mayo, spring onions and chilli flakes
  7. Enjoy
