Gluten and Dairy Free Cinnamon Roll Porridge

Serves 1

Ingredients

  • 50g gluten free porridge oats
  • 350ml water or dairy free milk
  • 1 tablespoon sultanas
  • 2 teaspoons brown sugar
  • 1 teaspoon cinnamon

Method

  1. Mix the oats, milk or water and honey in a small saucepan
  2. Bring to the boil and simmer for 4-5 minutes
  3. Pour into a bowl
  4. Stir together the brown sugar and cinnamon
  5. Put on top of the porridge, the heat will melt it
  6. Sprinkle on the sultanas

Hello

I’m back on the train again heading home so I thought I would try and get organised for the week ahead.  I’ve planned out what meals I want to make, order my Tesco shopping and now I’m working on the posts for the website.  I much prefer getting the train as door to door it takes about the same time as flying for me but I prefer just sitting relaxing on the train and using the time to get things done.

I’m going through a little phase of having different flavours of porridge for breakfast hence why there has been a few new porridge recipes recently.  I think the last one I shared with you was blueberry muffins flavour.  This porridge is inspired by the famous American flavour combination of peanut butter and jelly.  If you can’t have peanuts you can substitute it with a seed butter or just miss it out completely.

Gluten and Dairy Free Peanut Butter & Jelly Porridge

Serves 1

Ingredients

  • 50g gluten free porridge oats
  • 350ml water or dairy free milk
  • 1 teaspoon honey
  • 1 tablespoon peanut butter
  • 1 tablespoon raspberry chia jam (recipe here)
  • 1/2 small banana, sliced
  • sprinkle of crushed peanuts

Method

  1. Mix the oats, milk or water, honey and peanut butter in a small saucepan
  2. Bring to the boil and simmer for 4-5 minutes
  3. Top with the chia seed jam, banana slices and some crushed peanuts
  4. Serve immediately

Gluten and Dairy Free Blueberry Muffin Porridge

Morning everyone

Hope you all had a wonderful Christmas.  We had a lovely time and it was even more exciting this year as it was my niece’s first Christmas.  I do feel like I’ve eaten about a week’s worth of food in the last three days though.

Today is the day that all the visitors head home and the house returns to normality.  I though I would spend a bit of today planning some future posts for the website.  I’ll share a couple of new recipes this week and then I think I’ll round of the year with a look back at some of my favourite recipes of 2017.

As a little nod to something remotely healthy after the Christmas indulgence I decided to make some porridge for breakfast.  Porridge is something we all have a different view on in my family.  My parents are firm believers that porridge is porridge – only a pinch of salt should be added.  I love it but only with lots of things added and my sister hates it in any form!

Today’s porridge was inspired by blueberry muffins – I added a handful of blueberries to the porridge in the last minute of cooking so they are soft and juicy.  I’ve topped this bowl with a little brown sugar which melts into a lovely caramel, some cinnamon, more blueberries and some walnuts for crunch.

Inspired by this recipe, my new creativity journal and with some time on my hands rather than the normal chaos of my life, I’ve written down a list of porridge flavours I want to try next year – so look for them appearing on my website.

Gluten and Dairy Free Blueberry Muffin Porridge

Ingredients

  • 50g gluten free porridge oats
  • 350ml water or dairy free milk
  • 1 teaspoon honey
  • 1 tablespoon blueberries
  • toppings – I used brown sugar, cinnamon, more blueberries and walnuts

Method

  1. Mix the oats, milk or water and honey in a small saucepan
  2. Bring to the boil and simmer for 4-5 minutes
  3. Stir in the blueberries and cook for another minutes
  4. Top with the brown sugar, cinnamon, blueberries and walnuts
  5. Serve immediately

Gluten and Dairy Free Apple & Pomegranate Porridge

Serves 1

Ingredients

  • 50g gluten free porridge oats
  • 350ml water or dairy free milk
  • 1 teaspoon honey
  • 1 apple, peeled, cored and grated
  • 1 teaspoon pomegranate seeds

Method

  1. Mix the oats, milk or water, grated apple and honey in a small saucepan
  2. Bring to the boil and simmer for 4-5 minutes
  3. Pour into a bowl and top with the pomegranate seeds and a little more grated apple
  4. Serve immediately

Gluten and Dairy Free Mango and Blueberry Oatmeal

7 mins cooking time

  • 235ml dairy free milk
  • 235ml water
  • 2 tablespoons agave or honey
  • 1 mango, cut into chunks
  • 2 tablespoons blueberries
  • 1 tablespoon raspberries
  • sprinkle of ground cinnamon

Method

  1. Place the porridge oats, milk, water and agave/honey in a saucepan
  2. Bring to the boil and simmer for 3 minutes
  3. Chop the raspberries into small pieces and stir through the porridge
  4. Split between 2 bowls and top with the mango, blueberries and a sprinkle of cinnamon
