Gluten and Dairy Free Chocolate Peanut Butter Flapjacks

Hello everyone

I’m down in London catching up with friends for a few days so my posts have been a bit behind schedule.  I’m on the train tomorrow to Bristol so planning on catching up on some posts for next week.  I’ve got an article on where to get your gluten and dairy free Christmas pudding that needs to be written up.

Today’s recipe is for these delicious gluten and dairy free peanut butter and chocolate flapjacks.

Gluten and Dairy Free Chocolate Peanut Butter Flapjacks

Gluten and Dairy Free Peanut Butter & Jelly Waffle Sandwiches

Serves 2

Ingredients

  • 1 egg
  • 115ml dairy free milk
  • 20g dairy free spread, melted
  • 70g gluten free plain flour
  • 2 teaspoons caster sugar
  • 1 tablespoon peanut butter
  • 1 tablespoon strwaberry jam

Method

  1. Beat together the egg, dairy free spread and milk
  2. Whisk in the flour and caster sugar
  3. Pour batter into a pre heated waffle iron and cook for 5 minutes or until golden brown
  4. Sandwich the waffles together using the peanut butter and strawberry jam

After the excitement of pancake day I’ve found out that today is  National Peanut Butter Lover’s Day!  I’m not sure who decides it is peanut butter day but I’ve decided just to go with it anyway.

Hello everyone

This is my definition of a proper treat breakfast.  Rather than make traditional French Toast I’ve made a breakfast sandwich with banana and peanut butter.  I’ve cooked it the way you would French toast so you get the best of both worlds.

If you don’t like banana and peanut butter you can substitute this with any filling, sweet or savoury, that you would like.

Gluten and Dairy Free Salted Peanut Millionaire Bars

Hello

I love my peanut butter and it is such a handy ingredient to use in dairy free baking as it adds a creamy texture that is the perfect consistency for bars like this.  I also use it a lot to make creamy fudge.

These bars are going to become a real favourite of mine and I was also pretty pleased that I managed to sneak my Star Trek lunch box in.

Gluten and Dairy Free Salted Peanut Millionaire Bars

serves / makes 12
10 prep time
20 mins cooking time

Ingredients

For the base:

  • 110g dairy free spread
  • 170g gluten free plain flour
  • 50g caster sugar

For the filling:

  • 165g peanut butter
  • 35g dairy free spread
  • pinch of salt
  • 250g icing sugar
  • 40ml dairy free milk

For the topping:

  • 200g dairy free dark chocolate
  • 10g dairy free spread

Method

  1. Preheat the oven to 180 oC
  2. Mix together the dairy free spread, flour and caster sugar until it forms a ball
  3. Line a 6″ by 6″ tray bake tin with tin foil
  4. Press into the tin and bake for 20 minutes
  5. Allow to cool completely then make the filling
  6. Place the peanut butter and dairy free spread into a small saucepan
  7. Melt over a low heat
  8. Remove from the heat and stir in the icing sugar, salt and milk
  9. Spread over the base and chill for an hour in the fridge
  10. Melt the dairy free spread and dark chocolate together
  11. Spread the over the top of the peanut butter filing
  12. Return to the fridge until set
  13. Cut into bars

Morning Everyone

Yes it’s time for another pancake recipe – one day I am going to run out of pancake flavours.  I’m known for making giant stacks of pancakes – actually most Saturday mornings.  So much so my friend actually bought me this for my birthday a few months ago:

So I proudly eat my pancakes from that plate now!  This time my pancakes combine the notorious peanut butter and jelly – the pancakes have the peanut butter and are topped with a home made fruit compote.  A real treat to start off the day.

Gluten and Dairy Free Peanut Butter and Jelly Pancakes

serves / makes 2

Ingredients

For the pancakes:

  • 100g gluten free self-raising flour
  • 1 tablespoon caster sugar
  • 1 egg
  • 100ml dairy free milk
  • 1 tablespoon peanut butter, I used crunchy

For the fruit compote:

  • 1 teaspoon cornflour
  • 1 teaspoon lemon juice
  • 20g caster sugar
  • 150g mixed berries
  • 1 tablespoons water

Method

  1. In a large bowl stir together the flour and caster sugar
  2. Beat the egg and stir into the flour mix
  3. Gradually whisk in the milk until you have a smooth batter
  4. Heat a drizzle of oil in a shallow pan over a medium heat
  5. Add a quarter of the mix into the pan and cook for a couple of minutes on each side
  6. Repeat until you have cooked all the pancakes
  7. For the topping, put the cornflour, lemon juice, caster sugar, fruit and water into a small saucepan and cook for 5 minutes until the fruit has softened and the juice has thickened
  8. Spoon the fruit mixture over the peanut butter pancakes

Gluten and Dairy Free Peanut Butter Choc Chip Cookie Sandwiches

Description

Perfect little treat sized gluten and dairy free peanut butter and chocolate chip cookies. I’ve sandwiched some of these cookies together with peanut butter and the rest with dairy free chocolate spread. You can buy a dairy free chocolate spread such as Plamil from your local health store.

For the cookies:

  • 65g caster sugar
  • 65g brown sugar
  • 65g peanut butter
  • 30ml dairy free milk
  • 30ml vegetable or olive oil1 teaspoon vanilla extract, optional
  • 1 egg
  • 150g gluten free plain flour
  • 1 teaspoon xanthan gum
  • 1 teaspoon baking powder
  • pinch of salt
  • 60g dairy free dark chocolate chips

For the filling:

  • 1 tablespoon dairy free chocolate spread
  • 1 tablespoon peanut butter

Its been a super crazy week, a strange combination of hospital trips (everyone is fine now!), Fringe Festival nights out and of course the release of my first book in print. I love the peanut butter cups but the best bit for me is the peanut butter flavour so being super greedy for the peanuts I decided to see if I could change the chocolate to peanut butter balance. This experiment of balances ended up with the whole thing being reversed thus ending up with an inside out peanut butter cup.

Ingredients

  • 135g peanut butter
  • 50g coconut oil
  • 3 tablespoons icing sugar
  • 50g gluten free digestive biscuits, crushed
  • 1 teaspoon cocoa powder
  • 25g dairy free spread, melted

Method

  1. Mix together the crushed digestive biscuits, the cocoa powder and dairy free spread then set aside
  2. Place the peanut butter and coconut oil in saucepan and heat gently until melted and well combined
  3. Beat in the icing sugar
  4. Pour a layer about half a centimetre thick of the peanut mixture into a mini muffin paper case
  5. Place in the freezer for 10 minutes to set
  6. Squeeze together about a teaspoon of the biscuit mix until it forms a little ball
  7. Place onto the peanut butter layer then flatten but allow a border of peanut butter mix to show
  8. Cover with more peanut butter mix and return to the freezer to set
  9. Remove from the moulds and then store in the fridge to enjoy at your leisure
