Gluten and Dairy Free Serrano Ham & Spinach Pasta

Serves 2

Ingredients

  • 200g gluten free pasta
  • 2 garlic cloves, minced
  • pinch of chilli flakes
  • 1 red onion, sliced
  • 2 tablespoons sun-dried tomatoes
  • 4 slices serrano ham, torn
  • 2 large handfuls of spinach
  • 200ml dairy free cream
  • handful of dairy free cheese
  • 1 teaspoon basil
  • salt and pepper for seasoning

Method

  1. Cook the gluten free pasta per the instructions on the packet
  2. Heat a drizzle of olive oil in a large shallow pan
  3. Stir in the garlic cloves, chilli flakes, redonion and cherry tomatoes
  4. Sauté for 5 minutes
  5. Add in the spinach and serrano ham
  6. Pour in the cream and simmer for a couple of minutes
  7. Season with salt and pepper
  8. Stir in the grated cheese and basil
  9. Cook for another minute
  10. Stir in the cooked pasta and serve immediately

Gluten and Dairy Free Salmon Linguine

Hello everyone

This is one of my regular go to pasta dinners.  It has a light creamy sauce, dairy free of course, with beautiful flakes of salmon and fresh herbs.

It is one of those recipes that never fails to disappoint, it also looks and tastes like you went to more effort than you actually did.

To make this recipe I used Tesco FreeFrom Spaghetti and Alpro dairy free cream. I also made the garlic bread in the photo with Warbuton’s gluten free Artisan classic white loaf with crushed garlic and basil mixed into Pure dairy free spread.

Tdoay’s recipe is for a lovely fresh summer vegetable pasta salad.  It is perfect as a side dish at barbecues, for a picnic or  for your packed lunch at work.  I’ve also had a go at making another little video to accompany this recipe.  It will take me a while to get the knack of making these videos so stick with me while I get them right.

Gluten and Dairy Free Fresh Summer Pasta Salad

Serves 2

Ingredients

  •  120g gluten free pasta
  • 60ml passata
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic puree
  • salt and pepper for seasoning
  • 1/4 cucumber, chopped
  • 1/2 red pepper, chopped
  • 2 tablespoons cherry tomatoes, chopped
  • fresh parsley

Directions

  1. Cook the pasta per the instructions on the packet
  2. Allow to cool
  3. Stir in the pasta, lemon juice and garlic
  4. Season with salt and pepper
  5. Stir in the cucumber, red pepper, cherry tomatoes and parsley
  6. Divide between two tubs and enjoy at lunchtime

Hello everyone

With all the excitement of posting my first recipe video yesterday I totally forgot I promised to share this chicken and pepper pasta bake recipe this week.  So rather a bit late than never here it is.

It has been an up and down week with the website – for some reason the admin section was broken for a few days and I couldn’t log in to make any changes.  After an hour long phone call to the web site provider it was eventually fixed with nothing lost. It has taught me a lesson to better backup my website.

Gluten and Dairy Free Chicken and Pepper Pasta Bake

Gluten and Dairy Free Chicken and Pepper Pasta Bake

Serves 4

Ingredients

  • 200g gluten free pasta
  • 1 tablespoon olive oil
  • 2 chicken breasts, cubed
  • 1 onion, diced
  • 1 red pepper, diced
  • 2 garlic cloves, crushed
  • 300g passata
  • 125ml dairy free cream
  • 2 teaspoons mixed herbs
  • salt and pepper for seasoning

Directions

  1. Preheat the oven to 180 oC
  2. Bring a large pan of salted water to the boil and cook the pasta for 8 minutes
  3. In a large pan place the olive oil and garlic on a medium heat
  4. Add the chicken and cook for 5 minutes
  5. Add in the onion and pepper
  6. Saute for 5 minutes
  7. In a small saucepan place the passata, cream, mixed herbs and season with salt and pepper
  8. Bring to the boil and simmer for 5 minutes
  9. Pour the sauce and pasta into the chicken mix
  10. Place into a casserole dish
  11. Bake in the oven for 10 minutes

Gluten and Dairy Free Pepperoni Pizza Pasta Pots

Serves 2

Ingredients

  • 1 onion, finely diced
  • 1 pepper, sliced
  • 2 garlic cloves, minced
  • 400ml tin of chopped tomatoes
  • 2 teaspoons oregano
  • 1 teaspoon smoked paprika
  • 200ml ham stock
  • 1 teaspoon sugar
  • salt and pepper for seasoning
  • 200g gluten free pasta, cooked per instructions on the packet
  • 1 tablespoon dairy free cheese
  • 8 slices, pepperoni cut into quarters

Directions

  1. Heat a drizzle of olive oil in a shallow pan over a medium heat
  2. Add the onion, peppers, pepperoni and garlic and cook for  5 minutes
  3. Stir in the chopped tomatoes, oregano, paprika, ham stock and sugar
  4. Bring to the boil and simmer until the sauce has reduced and thickened
  5. Season with salt and pepper
  6. Stir through the cooked pasta
  7. Top with the grated cheese and some extra pepperoni

Last week I shared a gluten and dairy free basil pesto recipe and said I would follow up with a few recipes on how you could use it.  The first of these recipes is this simple chicken and spinach pasta salad.

I have been trying to make more varied lunches to take to work and these chicken pasta salad bowls are perfect.  They also stay fresh in the fridge for a couple of days so you can make in advance ready to pack for lunch.

As the weather is getting colder again and these is a snow warning tomorrow I’ll share my favourite gluten and dairy free soup recipes.

Gluten and Dairy Free Chicken and Spinach Pasta Salad

Serves 4

Ingredients

  • 2 chicken breasts, cut into chunks
  • 3 large handfuls spinach
  • 2 tablespoons sun-dried tomatoes
  • 1 red onion
  • 2 tablespoons dairy free basil pesto
  • 150g gluten free pasta

Method

  1. Heat a drizzle of olive oil over a medium heat and stir fry the chicken for about 10 minutes
  2. Cook the pasta according to the instructions on the packet
  3. Allow the chicken and pasta to cool
  4. In a large bowl stir together the chicken, pasta, spinach, tomatoes, onion and pesto
  5. Divide between two serving bowls and enjoy

Gluten and Dairy Free Chorizo, Mushroom & Sun-Dried Tomato Pasta

Christmas and New Year festivities seems like a distant memory now.  I’ve had a good first week back at work and I’m starting to think about new ideas and recipes for the website for 2018.

I don’t really set any New Year resolutions but it is a good time of year to take stock of where things are and get re-energised for the next 12 months.

Today’s recipe is for very tasty pasta dish loaded with flavours from the chorizo and sun dried tomatoes.  I love cooking with chorizo, it just makes everything taste so much better but make sure you check the ingredients as some chorizo has milk in.
