I’m out of the hospital now after having my elbow operation last Wednesday.  I’m very lucky to have an amazing surgeon and my operation went very well.  I think I’ve written a bit about it before but I have Ehlers Danlos Syndrome.  Among a whole lot of other weird symptoms I suffer from joint instability and dislocations hence why I’m always having orthopaedic surgery.

Thankfully I have a few recipes photographed and typed up that I can share with you guys while my elbow heals.  I thought I would share a new pancake recipe with you in advance of pancake day and tomorrow I’ll post an article with my favourite 20 gluten and dairy free pancake recipes.

Gluten and Dairy Free Toffee Apple Pancakes

Gluten and Dairy Free Toffee Apple Pancakes

Ingredients

  • 100g gluten free self-raising flour
  • 1 tablespoon caster sugar
  • 1 egg
  • 100ml dairy free milk
  • 2 tablespoons apple sauce
  • 2 tablespoons dairy free caramel sauce (check out my recipe here)

Method

  1. In a large bowl stir together the flour and caster sugar
  2. Beat the egg and stir into the flour mix
  3. Gradually whisk in the milk until you have a smooth batter
  4. Heat a drizzle of oil in a shallow pan over a medium heat
  5. Add a quarter of the mix into the pan and cook for a couple of minutes on each side
  6. Repeat until you have cooked all the pancakes
  7. Top with the apple sauce and caramel

Morning Everyone

Yes it’s time for another pancake recipe – one day I am going to run out of pancake flavours.  I’m known for making giant stacks of pancakes – actually most Saturday mornings.  So much so my friend actually bought me this for my birthday a few months ago:

So I proudly eat my pancakes from that plate now!  This time my pancakes combine the notorious peanut butter and jelly – the pancakes have the peanut butter and are topped with a home made fruit compote.  A real treat to start off the day.

Gluten and Dairy Free Peanut Butter and Jelly Pancakes

Ingredients

For the pancakes:

  • 100g gluten free self-raising flour
  • 1 tablespoon caster sugar
  • 1 egg
  • 100ml dairy free milk
  • 1 tablespoon peanut butter, I used crunchy

For the fruit compote:

  • 1 teaspoon cornflour
  • 1 teaspoon lemon juice
  • 20g caster sugar
  • 150g mixed berries
  • 1 tablespoons water

Method

  1. In a large bowl stir together the flour and caster sugar
  2. Beat the egg and stir into the flour mix
  3. Gradually whisk in the milk until you have a smooth batter
  4. Heat a drizzle of oil in a shallow pan over a medium heat
  5. Add a quarter of the mix into the pan and cook for a couple of minutes on each side
  6. Repeat until you have cooked all the pancakes
  7. For the topping, put the cornflour, lemon juice, caster sugar, fruit and water into a small saucepan and cook for 5 minutes until the fruit has softened and the juice has thickened
  8. Spoon the fruit mixture over the peanut butter pancakes

Healthy Three Ingredient GF DF Banana Pancakes

Description

I’m always experimenting with pancakes recipes, I’m known amongst friends and family as a pancake lover! Today I’ve had a go at making a simple healthy pancake for breakfast with only three ingredients. The oats provide the fuel for the rest of the day, some protein from the egg and the natural sweetness from the banana. I hope you enjoy them as much as I did.

Ingredients

  • 50g gluten free oats
  • 1 large banana
  • 1 egg

Method

  1. Place the egg, banana and oats in a blender and blitz until you have a smooth pancake batter
  2. Heat a drizzle of oil in a shallow pan over a medium heat
  3. Divide the batter drop half the mixture into the pan and cook for a couple of minutes on each side
  4. Repeat with the rest of the mixture
  5. Enjoy your simple banana pancakes

Description

Another gluten and dairy free pancake recipe! This time I’ve topped them with a dairy free chocolate spread and sprinkled on some gluten free strawberry granola. Incase you’re wondering I used the Plamil dairy free chocolate spread and Glebe Farm Gluten Free Strawberry Granola.

Gluten and Dairy Free Savoury Pancakes with Avocado & Bacon

Description

This recipe would make a perfect dish for brunch. I make a lot of pancakes but 99% of the time I always pick a sweet recipe. These savoury pancakes are light and fluffy with a little hint of chilli. The avocado and bacon are the perfect toppings for these pancakes.

Ingredients

For the savoury pancakes:

  • 125g gluten free plain flour
  • 240ml dairy free milk
  • 2 eggs
  • 2 tablespoons fresh chives
  • 1 tablespoon dairy free cream cheese
  • 1/2 teaspoon dried chilli flakes
  • 1 teaspoon dried parsley
  • salt and pepper for seasoning

For the topping:

  • 1 avocado
  • 1 teaspoon lemon juice
  • salt and pepper for seasoning
  • sprinkle of dried chilli flakes
  • 8 slices of bacon

Method

  1. Make the savoury pancakes by mixing together the flour, milk, eggs, chives, cream cheese, chilli and parsley
  2. Season with salt and pepper
  3. Heat a shallow pan with a drizzle of olive oil over a medium heat
  4. Add a tablespoon of the pancake mixture and cook for a couple of minutes on each side
  5. Fry the bacon until crisp
  6. Mash the avocado with the lemon juice and season with salt and pepper
  7. Top the pancakes with the avocado and bacon
  8. Sprinkle on a couple of dried chilli flakes

My regular followers will know how much I love my pancakes – they are my favourite weekend treat and I love to try new flavour combinations. This weekend I’ve made mocha pancakes – chocolate pancakes with an espresso shot – what better way to start the day?

  • 1 tablespoon caster sugar
  • 1 egg
  • 1 shot of espresso
  • 80ml dairy free milk

Method

  1. In a large bowl stir together the flour, cocoa and caster sugar
  2. Whisk in the egg
  3. Gradually beat in the dairy free milk and espresso until you have a smooth pancake batter
  4. Heat a drizzle of olive oil in a shallow pan over a medium heat
  5. Split the batter into four and cook the pancakes for a couple of minutes on each side

Gluten and Dairy Free Cinnamon Pancakes with Apple, Yoghurt & Granola

Description

One of my favourite breakfasts is pancakes. It’s funny because before I was diagnosed I wasn’t that great at making them, since I’ve been gluten and dairy free I’ve been happy with how my pancakes turn out so I’m always experimenting with new flavours and toppings.

This morning I made cinnamon pancakes and topped with apple sauce, dairy free yogurt and a sprinkle of gluten free granola.

Gluten and Dairy Free Banana Oat Pancakes

Description

Pancakes, closely followed by granola, is one of my favourite breakfast, that probably explains why there are so many recipes for both of these items on my website.

These pancakes are light and fluffy and packed full of good gluten free oats, I’ve also replaced the refined sugar with agave or honey.

  • 70g gluten free oats
  • 105g gluten free oat flour or plain flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 banana, mashed
  • 2 eggs
  • 240ml dairy free milk
  • 1 tablespoon honey or agave
  • 2 tablespoons coconut/vegetable/olive oil

Method

oat pancakes

  1. Place all the ingredients in a large bowl
  2. Beat until you have a smooth batter
  3. Heat a drizzle of oil in a shallow pan over a medium heat
  4. Add 2-3 tablespoons of mixture
  5. Cook the pancakes for a couple of minutes on each side until golden
  6. Serve with a knob of dairy free serve and a drizzle of agave or honey
