Gluten and Dairy Free Candied Orange Madeira Cake

I’m writing this post on a leisurely Sunday morning enjoying a lovely gluten and dairy free breakfast in an Italian café.  By the time you guys are reading this though I will be in my usual during the week disorganised routine rushing around doing a million things.

I posted a recipe for a basic Madeira cake ages ago and this recipe uses that as a base. I’ve gone with the orange flavour adding zest to the sponge and filling it with a delicious marmalade.

Gluten and Dairy Free Candied Orange Madeira Cake

For the cake:

  • 350g gluten free self-raising flour
  • 285g caster sugar
  • 285g dairy free spread
  • 5 eggs
  • zest and juice of one large orange
  • 4 tablespoons orange marmalade
  • 8 tablespoons icing sugar
  • 8 teaspoons water

For the candied oranges:

  • 1 large orange
  • 100g sugar
  • 180ml water


  1. Preheat the oven to 150 oC
  2. Grease a 9″ round cake tin
  3. Place the flour, sugar, dairy free spread, eggs, orange juice and zest
  4. Beat for a couple of minutes until light and fluffy
  5. Pour into the cake tin and bake in the oven for 90 minutes
  6. Remove from the cake tin and allow to cool completely
  7. Slice the cake in half and sandwich back together with the marmalade
  8. Make the icing drizzle by mixing together the icing sugar and water
  9. Pour over the top of the cake
  10. Make the candied orange by placing the sugar and water in the pan and bringing to the boil, avoid stirring
  11. Cut the orange into slices and then quarters, add to the pan and simmer for 20 minutes
  12. Remove from the sugar syrup and allow to cool before decorating your cake
