Gluten and Dairy Free Chocolate Swirl Meringues

Makes 8


  • 4 egg whites
  • 1 teaspoon cornflour
  • 250g caster sugar
  • 100g dairy free dark chocolate, melted


  1. Preheat the oven to 150 oC
  2. Line a baking sheet with parchment paper
  3. Put the egg whites in a bowl and whisk until stiff peaks form
  4. Gradually add the caster sugar and cornflour while constantly whisking the mixture
  5. Drizzle the melted chocolate into the bowl over the top of the meringue but don’t stir it in
  6. Scoop out the meringue and the chocolate will naturally swirl through it
  7. Place on the baking sheet
  8. Bake in the centre of the oven for 30 minutes
  9. Turn off the oven and open the door but leave the meringues in the oven until they cool
