Gluten and Dairy Free Red Lentil and Aubergine Moussaka

Description

A really tasty dish made from fresh ingredients. Rather than use the traditional cheese sauce for the topping I’ve made a garlic and herb sauce.

Ingredients

  • 1 large aubergine
  • 2 tablespoons olive oil
  • salt and pepper, for seasoning
  • 1/2 red onion, finely chopped
  • 1/2 red pepper, finely chopped
  • 1/2 courgette, finely chopped
  • 1 garlic clove, finely chopped
  • 1 tablespoon tomato puree
  • 200 g chopped tomatoes
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon mixed herbs
  • 50g red lentils
  • 1 teaspoon oregano

For the topping:

  • 150 ml dairy free milk
  • 10g dairy free spread
  • 1 teaspoon cornflour
  • 1/2 clove garlic, minced
  • salt and pepper, for seasoning
  • 1 teaspoon parsley
  • 1 tablespoon gluten free breadcrumbs

Method

  1. Preheat the oven to 180C
  2. Boil the lentils for 15 minutes and drain
  3. Cut the aubergine into thick slices and drizzle with olive oil on both sides, season with salt and pepper
  4. Cook the aubergines on both sides in a hot pan for about 5 minutes in total
  5. In another pan, add the onion, pepper, courgette, chilli and garlic
  6. Stir fry until soft, about 5 minutes
  7. Add the tomato purée and the chopped tomatoes and simmer for 4-5 minutes.
  8. Stir in the cooked lentils, cinnamon and oregano
  9. For the topping, melt the butter in a saucepan and stir in the cornflour, add the milk and bring to the boil.
  10. Stir in the garlic and parsley
  11. Build the moussaka towers by layering the aubergine slices, lentil mix and top with the sauce
  12. Sprinkle on the gluten free bead crumbs
  13. Bake in the oven for 10 minutes

Gluten and Dairy Free Nachos

I love Mexican food but just the thought of all that sour cream, flour tortillas, cheese etc can be enough to churn the stomach of anyone having to follow a gluten and dairy free diet.

I’ve pulled together a quick recipe that is a fresh alternative take on nachos.

Ingredients

  • 150g gluten and dairy free tortilla chips or make your own
  • 2 chicken breasts, diced
  • 1 onion, diced
  • 1 red pepper, diced
  • 1 garlic clove, minced
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon oregano
  • 1 teaspoon ground cinnamon
  • 1 lime, juiced
  • 1/2 tablespoon sugar
  • 1 large ripe avocado
  • 2 teaspoons dairy free natural yoghurt or mayonnaise
  • Handful of cherry tomatoes
  • Salt and pepper, for seasoning

Method

GF DF Nachos

  1. Make the fajita marinade by combining the garlic, cayenne pepper, oregano, cinnamon, lime juice and sugar in a large bowl
  2. Add the diced chicken and stir until coated
  3. Season with salt and pepper
  4. Heat a drizzle of olive oil on a high heat in a large frying pan
  5. Add the chicken and cook for 5 -10 minutes
  6. Add in the diced onion and peppers and cook for a further five minutes
  7. Arrange the tortilla chips in a large bowl or plate
  8. Place the chicken on top of the chips
  9. Half the cherry tomatoes and season with salt and pepper
  10. Place on top of the cooked chicken
  11. Slice the avocado and place on top of the tomatoes
  12. Drizzle with the dairy free natural yoghurt or mayonnaise

Gluten and Dairy Free Mediterranean Salmon

Description

This super quick dinner can be made in under 20 minutes. It is a lovely fresh tasting dish, bursting with mediterranean vegetables and herbs.

Ingredients

For the salmon:

  • 4 salmon steaks
  • 1 garlic clove, minced
  • 2 teaspoons mixed herbs

For the vegetables:

  • 1 red onion
  • 1 red pepper
  • 1 yellow pepper
  • 1 courgette
  • 16 cherry tomatoes
  • 1 teaspoon parsley
  • 1 teaspoon oregano
  • 1 garlic clove, minced

For the potatoes:

  • 12 small potatoes
  • 10g dairy free spread
  • 2 teaspoons mixed herbs
  • 1 garlic clove, minced
  • 1/2 teaspoon chilli paste

Method

Salmon

To make the salmon:

  • Spread the minced garlic on the top of each of the salmon steaks
  • Sprinkle with the mixed herbs and season with salt and pepper
  • Heat a frying or griddle pan on a medium heat
  • Add a drizzle of olive oil
  • Cook the salmon steaks for 12 minutes, turning so all sides are seared

To make the vegetables:

  • Cut the vegetables into chunky strips, I tend to keep the tomatoes whole
  • Heat a drizzle of olive oil in a pan over a high heat
  • Add the garlic and the vegetables
  • Cook for 5 minutes

To make the potatoes:

Potatoes

  • Wash and pierce each of the potatoes
  • Cook them in the microwave for about 5 minutes
  • Heat some olive oil, dairy free spread, herbs, garlic and chilli in a frying pan over a high heat
  • Add the potatoes, stir to coat them in the herby oil
  • Cook until crispy all over about 5-10 minutes

Gluten and Dairy Free Chicken and Prawn Jambalaya

Creole jambalaya originates from the French Quarter of New Orleans, in the original European sector. It was an attempt by the Spanish to make paella in the New World, where saffron was not readily available due to import costs.

I managed to pick up smoked sausage from Lidl that didn’t contain any gluten or dairy keeping the cost of this dish down.

  • 1 tablespoon olive oil
  • 2 chicken breasts, diced
  • 150g smoked sausage (check it is GF DF), sliced
  • 1 onion, diced
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon tomato puree
  • 1/2 teaspoon cayenne pepper
  • 2 heaped teaspoons smoked paprika
  • 200g rice
  • 400g tin of chopped tomatoes
  • 450ml chicken or vegetable stock
  • 150g prawns, peeled and deveined
  • salt and pepper for seasoning
  • 1 tablespoon chives

Method

jambalya

  1. Place the olive oil in a large pot and gently warm over a medium heat
  2. Add in the garlic, tomato puree and chicken
  3. Cook for 8 minutes
  4. Add in the smoked sausage, onion, peppers, cayenne pepper and smoked paprika
  5. Cook for a further 8 minutes
  6. Stir in the rice, chopped tomatoes and stock
  7. Bring to the boil and simmer for 20 minutes covered or until the rice is tender
  8. Season with salt and pepper
  9. Stir in the prawns and chives and cook for 5 minutes

Gluten and Dairy Free Barbecue Pork Belly

Description

This makes a quick and easy dinner as you can prepare the rub the night before. You can also use the barbecue rub in any recipe you like if you are not a fan of pork belly or just fancy a change.

I served this on a bed of roasted onion and peppers with some homemade potato wedges.

  • 4 slices pork belly
  • olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon paprika
  • 1 teaspoon brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon chilli powder
  • 1 teaspoon oregano
  • salt and pepper for seasoning

Method

  1. Preheat the oven to 180 oC
  2. Drizzle some olive oil on the pork belly slices
  3. Combine all the herbs and spices together and rub onto the pork
  4. Sear all sides of the pork in a frying pan over a high heat
  5. Transfer to the oven and cook for another 20 minutes

Gluten and Dairy Free Paprika Chicken with Lemon & Leek Spaghetti

Pasta is such an easy meal to prepare and there are some great gluten free options out there to try. Rather than go for the traditional tomato based sauce I decided to try and make something lighter so went with a simple leek and lemon sauce. To compliment the spaghetti I served it with a piece of paprika coated chicken. Perfect for a quick, simple but tasty gluten and dairy free mid-week dinner.
