I’ve recently seen a few gluten free quiches in the shops which is brilliant but for me I can’t usually have them due to the dairy content. I’ve only had quiche once since I was diagnosed, it was in a little bakery in Paris and it tasted sublime (and I was super excited it was gluten and dairy free).

This is my first attempt at a simple quiche with bacon and cheese. I think next time I’ll try making a vegetable quiche and I’ll maybe invest in a deeper flan tin to get a thicker quiche slice.

Gluten and Dairy Free Chicken & Avocado Sushi

The origin of sushi is believed to have been during the second century A.D. in Southeast Asia. It developed through a need to keep meat fresh without refrigeration. Meat and fish would be cured and wrapped in rice to preserve its freshness. The idea eventually spread through China and then to Japan, where fish is a food staple. The Japanese would ferment their cured fish and rice sushi with Japanese rice wine, or sake.

A lot of sushi is naturally dairy and gluten free, just be careful of any wheat based soy sauce.

Gluten and Dairy Free Spanish Omlette

Spanish Omlette

This Spanish Omlette is made from potato, eggs and seasoning which makes it naturally dairy and gluten free. Traditionally in Spain it is served at room temperature which makes it the perfect dish to cook the night before, refrigerate and then take with you for a packed lunch. This does not freeze well as the egg tends to go watery.
