Gluten and Dairy Free Choc Nut Granola

Hello everyone

I’ve started doing a bit of work on my website updating some of the photographs and graphics that I have.  When I started my website the recipes worked well but some of the photographs aren’t the best.

Luckily I live a couple of minutes walk from this beautiful bay and spent a couple of hours in the sun working on this week’s posts and a plan for the photos I want to change.  I also had a lemon and raspberry cupcake with me to eat – I’ll share the recipe soon.

I often make my own gluten free breakfast cereal as it is so simple, and cheaper, to make.  As I can pick what I put in it I also enjoy the variety as there is often not a great choice in the supermarket.

Gluten and Dairy Free Choc Nut Granola

Gluten and Dairy Free Gingerbread Granola

Serves 8

Ingredients

  • 270g gluten free oats
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons ground ginger
  • 4 tablespoons honey
  • 1 tablespoon treacle
  • 4 tablespoons olive oil
  • 4 tablespoons sultanas

Directions

  1. Preheat the oven to 150 oC
  2. Heat the sugar, cinnamon, ginger, treacle and oil in a small saucepan for 5 minutes
  3. Place the oats in a large bowl and pour in the syrup mix
  4. Stir until well coated
  5. Spread out a large baking sheet and bake for 15 minutes
  6. Remove from the oven and stir the oats
  7. Return to the oven for 10 minutes
  8. Allow to cool then stir in the sultanas

Hope everyone is having a relaxing start to their Sunday.  I have family visiting today so I’ve currently got some bread baking in the oven for lunch time.

This recipe is just a little extra, I hadn’t planned on sharing it as I have a million recipes for granola on the site.  Once I had made my breakfast of dairy free yoghurt, raspberries, blueberries and topped it with the granola I thought I would take a quick snap and share it.

Gluten and Dairy Free Apple and Sultana Granola

Gluten and Dairy Free Apple and Sultana Granola

Makes 6-8 servings of granola

Ingredients

  • 270g gluten free porridge oats
  • 2 tablespoons light brown sugar
  • 1 teaspoon ground cinnamon
  • 5 tablespoons honey
  • 4 tablespoon of olive oil
  • 3 tablespoons dried apple, chopped
  • 2 tablespoons sultanas

Method

  1. Pre-heat the oven to 150 oC
  2. Heat the sugar, cinnamon, oil and honey in a small saucepan for about 3-5 minutes
  3. Place the oats in a large bowl and pour over the mix from the saucepan
  4. Stir well until oats are coated in the sugar mix
  5. Spread out the oats on a large baking sheet covered by parchment paper and place in the oven for 15 minutes
  6. Remove from the oven and stir the oats, return to the oven for another 10 minutes
  7. Remove the granola from the oven and allow to cool, it will harden during cooling
  8. Once cooled, stir through the chopped dried apple and sultanas and store in an airtight container

 

Gluten and Dairy Free Sultana and Cashew Nut Granola

Morning everyone

It’s a busy week for me – I go into hospital to have my elbow operation on Wednesday.  It has to be my right hand of course so I may not post as many recipes as I usually do.  I have a few new recipes photographed and ready to share though so there will be posts.

Last weekend I put together this cashew nut and sultana granola.  It doesn’t take long to make and you can store it in an airtight container to enjoy over the next few weeks.

Gluten and Dairy Free Sultana and Cashew Nut Granola

serves / makes 8
10 prep time
30 mins cooking time

Ingredients

  • 115ml coconut oil
  • 115ml honey
  • 50g brown sugar
  • 450g gluten free oats
  • 135g cashew nuts
  • 135g sultanas

Method

  1. Preheat the oven to 160 oC
  2. Place the coconut oil, honey and brown sugar in a saucepan
  3. Heat gently until melted and well combined
  4. Place the oats and cashew nuts in a large bowl
  5. Pour over the coconut oil mixture and stir until all the oats are well coated
  6. Spread out across a couple of lined baking sheets
  7. Bake for 30 minutes, stirring the oats halfway through cooking
  8. Allow to cool then stir through the sultanas
  9. Store in an airtight container

Gluten and Dairy Free Peanut Choc Chip Granola

I’ve had a really busy last couple of weeks, I’ve been away the last two weekends and whilst that is fabulous fun it means I’ve been chasing my tail a bit during the week catching up on things. This morning I’ve enjoyed just getting up and making my granola, photographing it in the natural light and posting it straight on the website.

I’m absolutely craving the light nights to come, my photos for the website always look rubbish and orange when I photograph during the week but sometimes I have no choice if I’m not about at the weekend – so roll on the light nights and better photographs.

My book about gluten and dairy free cake is also starting to take shape, I’ve picked the 50 cakes I want to develop recipes for, have split them into chapters such a Fabulously Fruity, Magical Muffins etc. So far I have finished the recipes and photographs for a flourless chocolate cake, peppermint slices, banana choc chip muffins and raspberry and white chocolate blondies. I’ll keep you posted on the progress of the book.

This recipe is back to one of my favourite breakfast treats – the humble granola, this time I’ve made a peanut chocolate chip version. I’ve served it with a little dairy free coconut yoghurt and some cherries. If you can’t have peanuts then try making this with a free nut butter and omit the peanuts.

  • 240g gluten free oats
  • 80g peanuts
  • 135g peanut butter, crunchy or smooth
  • 65g coconut oil
  • 120ml honey
  • 60g dairy free chocolate chips

Method

  1. Preheat the oven to 150 oC
  2. Place the honey and coconut oil in a small saucepan
  3. Heat gently until melted
  4. Stir in the peanut butter and cook until smooth and well combined
  5. In a large bowl place the oats and peanuts and mix together
  6. Stir in the melted ingredients from the saucepan and mix until all the oats are well covered
  7. Spread out on two lined baking sheets
  8. Bake in the oven for 30 minutes stirring every 10 minutes
  9. Remove from the oven and allow to cool
  10. Stir in the chocolate chips

Gluten and Dairy Free Banana and Peanut Granola

serves / makes 8

Description

Granola is one of my favourite breakfasts, especially when it is accompanied by dairy free yoghurt ad some fresh berries. I have a few versions of gluten and dairy free granola on the website if you don’t fancy this flavour combination.

Ingredients

  • 60g coconut oil
  • 120ml honey
  • 125g peanut butter, smooth or crunchy
  • 250g gluten free oats
  • 1 teaspoon ground cinnamon, optional
  • 150g peanuts
  • 100g dried banana chips

Method

  1. Preheat the oven to 150 oC
  2. Line 2 baking sheets with tinfoil
  3. In a small saucepan gently heat the coconut oil and honey until melted together and smooth
  4. Stir in the peanut butter and mix until well combined
  5. Remove from the heat
  6. In a large bowl place the oats and cinnamon
  7. Pour the honey mix over the oats
  8. Stir until all the oats are well coated
  9. Spread out the oats between the 2 baking sheets
  10. Bake for 30 minutes, stir every 10 minutes
  11. Remove from the oven and allow to cool
  12. Stir through the peanuts and banana chips
  13. Store in an airtight container

Gluten & Dairy Free Granola Bars

serves / makes 9 bars
30 prep time
30 mins cooking time

Description

I probably spend a fortune on gluten and dairy free cereal bars as I’m always snacking in between meals. I was craving a homemade soft and chewy cereal bar which of course had to be gluten and dairy free. I’ve used granola as the base of this bar as it is one of my favourite things to make, not sure why, but I always have a tonne of gluten free granola in my house. Soft, sweet and chewy – these bars are the perfect afternoon snack treat.

Ingredients

  • 150g gluten free granola
  • 80g brown sugar
  • 45g gluten free plain flour
  • 1 teaspoon ground cinnamon
  • 200g mix of dried fruit, nuts & seeds
  • 60g nut butter, I used cashew
  • 6 tablespoons coconut oil
  • 80g honey or agave

Method

  1. Preheat the oven to 160 oC
  2. Line an 8” by 8” baking pan with tinfoil or parchment paper leaving an overhang so you can easily left the bars out
  3. Mix all the ingredients together in a large bowl and press firmly into the tin
  4. Bake for 30 minutes
  5. Allow to cool completely in the pan
  6. Refrigerate for 30 minutes
  7. Remove from the pan and cut into 9 bars
