Gluten and Dairy Free Cardamom Raisin Flapjacks

Hello everyone

Sometimes all you can do is laugh at the irony of a situation.  I’ve got to start taking medication because my already low blood pressure has got lower  – I’m talking lets check if the blood pressure monitor is broken low.

I had to laugh as my lifestyle points more towards high blood pressure – work is pretty busy just now and I do tend to work long hours, I eat a lot as you can see from the website, I love my coffee and I’m not someone who ever really sits down and relaxes.

Anyway, now I have to take these tablets and monitor my blood pressure every three hours.  Although I’ll grumble about it for a few days I’m grateful for the treatment and help that keeps me in control of my Ehlers Danlos Syndrome.

On to more exciting things – cardamom and raisin flapjacks!  I enjoy making flapjacks as a breakfast treat with some dairy free yoghurt and fruit.  The cardamom gives the flapjacks a really warm, interesting flavour – if you don’t have any then you can replace with cinnamon or ginger.

Gluten and Dairy Free Cardamom Raisin Flapjacks

Gluten and Dairy Free Chocolate Peanut Butter Flapjacks

 

Serves 6

Ingredients

  • 150g dairy free spread
  • 100g soft brown sugar
  • 50g golden syrup
  • 50g peanut butter, I used crunchy
  • 225g gluten free porridge oats
  • 80g dairy free dark chocolate

Method

  1. Preheat the oven to 180 oC
  2. Line a 6″ square tin
  3. Place the dairy free spread, brown sugar, syrup and peanut butter in a small saucepan
  4. Cook over a low to medium heat until melted and well combined
  5. Pour into a large bowl and stir in the oats
  6. Press into the tin and bake for 25 minutes
  7. Allow to cool for 10 minutes then make into bars
  8. Leave to cool completely in the tin
  9. Drizzle the melted chocolate on top

I made these flapjacks at the weekend and individually wrapped them for the coming week.  They are a great addition to a packed lunch or I enjoyed them for my breakfast with some dairy free yoghurt and fruit.

Gluten and Dairy Free Chocolate Flapjacks Recipe

Gluten and Dairy Free Coconut Quinoa Flapjacks

Description

I like to enjoy a flapjack as a treat for breakfast every so often with some fruit and a big mug of coffee. Lots of flapjacks are just loaded with sugar so I’ve tried to make a healthier (but still as tasty) version, which is of course gluten and dairy free. Rather than use butter and golden syrup I’ve gone with coconut oil and honey instead. I’ve also tried to up the nutritional value by adding income chia seeds and quinoa flakes which you can pick up from one supermarkets or health food stores.

Ingredients

  • 350g gluten free oats
  • 2 tablespoons quinoa flakes
  • 2 tablespoons chia seeds
  • 2 tablespoons desiccated coconut
  • 2 tablespoons sultanas
  • 130g coconut oil
  • 5 tablespoons honey

Method

  1. Preheat the oven to 160 oC
  2. Place the oats, quinoa flakes, chia seeds, coconut and sultanas in a large bowl
  3. Add the coconut oil and honey into a small saucepan and heat gently until melted and well combined
  4. Pour over the oat mix and stir together
  5. Grease an 8″ by 8″ cake tin
  6. Pour in the flapjack tin and press down firmly
  7. Bake for 20 minutes
  8. Allow to cool and then cut into 9 squares

Gluten and Dairy Free Chocolate Topped Flapjacks

serves / makes 9 bars

Ingredients

  • 145g dairy free spread
  • 50g brown sugar
  • 3 tablespoons honey
  • 235g gluten free porridge oats
  • 150g dairy free dark chocolate

Method

  1. Preheat the oven to 180 oC
  2. Place the dairy free spread, sugar and honey in a saucepan on a medium heat until melted and well combined
  3. Stir in the oats
  4. Press into a lined 6″ by 6″ tin
  5. Bake in the oven for 20 minutes
  6. Remove from the oven but leave in the tin and allow to cool
  7. Melt the dairy free chocolate and pour over the flapjack
  8. Allow to set then remove from the tin and cut into 9 bars

  • 115g dairy free spread
  • 70g soft brown sugar
  • 3 tablespoons honey/agave
  • 350g gluten free porridge oats
  • 1 large ripe pear, peeled and cut into small cubes
  • 100g dairy free dark chocolate chips

Method

  1. Preheat the oven to 160 oC
  2. Grease and line a 20cm traybake tin
  3. Place the dairy free spread, sugar and honey/agave into a saucepan and heat gently until melted
  4. Stir in the oats
  5. Stir through the pear and chocolate chips
  6. Press into the baking tin
  7. Bake for 30 minutes
  8. Remove from the oven and allow to cool for 20 minutes in the tin
  9. Cut into 9 squares and allow to cool completely

Gluten and Dairy Free Apple and Prune Flapjacks

serves / makes 9

Description

The traditional flapjack recipe uses lots of butter and golden syrup to hold the oats together. For this recipe I’ve used prunes cooked in some apple juice mixed through gluten free oats. The results are a lovely moist apple gluten and dairy free flapjack, it’s inspired me to have go at making some other flavours of flapjack!

  • 150g prunes, stoned and ready to eat
  • 3 tablespoons apple juice
  • 40g caster sugar
  • 150g dairy free spread
  • 2 tablespoons sultanas
  • 225g gluten free porridge oats
  • 1 medium sized apple, peeled and chopped into small pieces

Method

  1. Preheat the oven to 180 oC
  2. Place the prunes, apple juice, caster sugar and dairy free spread in small saucepan
  3. Cook over a medium heat until the spread has melted and the sugar has dissolved
  4. Carefully pour into a food processor and blitz until smooth
  5. In a large bowl mix together the porridge oats, sultanas and chopped apple
  6. Stir in the blended prunes until the oats are well coated
  7. Press into a greased traybake tin
  8. Bake in the centre of the oven for 20 minutes
  9. Allow to cool in the traybake tin for 20 minutes
  10. Remove from the tin and cut into 9 squares
