Gluten and Dairy Free Herby Tuna Steaks

Description

A simple dinner recipe using all naturally gluten and dairy free ingredients, the tuna fish can be easily coated the night before and then cooked when you get home from work.

Ingredients

  • 2 tuna steaks
  • 1 teaspoon coriander leaf
  • 1 teaspoon dill
  • 1 teaspoon parsley
  • 1 tablespoon of lemon juice
  • salt and pepper for seasoning

Method

  1. Season both sides of the tuna with the salt and pepper
  2. Drizzle over the lemon juice
  3. In a small bowl mix together the coriander leaf, dill and parsley
  4. Sprinkle over the fish, if you have time leave to marinade for a couple of hours
  5. Heat a grill or frying pan over a medium to high heat
  6. Sear the tuna steaks for a couple of minutes on each side
  7. Serve with salad and fries

Gluten and Dairy Free Grilled Hake with Mango Salsa

Ingredients

For the fish:

  • 4 hake portions
  • salt and pepper for seasoning
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 2 tablespoons paprika
  • 1 tablespoon lemon juice

For the mango salsa:

  • 400g tomatoes, diced
  • 1 large ripe mango, peeled and diced
  • 1 small onion, diced
  • 2 teaspoons coriander leaf
  • 2 tablespoons lime juice
  • 1 small chilli, deseeded and finely sliced
  • 1 garlic clove, minced
  • salt and pepper to taste

  1. Make the coating for the fish by mixing together the olive oil, garlic, paprika, lemon juice and seasoning
  2. Coat the fish in the marinade
  3. Grill the fish in the frying pan in a little olive oil over a medium heat for 3 minutes on each side
  4. To make the mango salsa combine all the ingredients in a medium sized bowl
  5. Serve the hake with the mango salsa

Gluten and Dairy Free Fish Pie with Dill Mash

Description

There is nothing more comforting than a baked dish for dinner. This simple supper contains three different types of fish in a dairy free white sauce topped with dill flavoured mash. You can prepare this the night before and then bake in the oven when you get home from work after a busy day.

Ingredients

  • 1 large slice of smoked haddock
  • 1 large slice of cod
  • 1 salmon steak
  • 300ml dairy free milk
  • 1 teaspoon parsley
  • 1 clove of garlic, minced
  • 4 large potatoes
  • 20g dairy free spread
  • 1 tablespoon gluten free flour
  • 1 teaspoon dill
  • sal and pepper for seasoning

Method

  1. Peel and cube the potatoes, place in a large pan of salted water and boil for 15-20 minutes
  2. Drain and mash the potatoes, stir though the dill, half the dairy free spread and season with salt and pepper
  3. Place the milk in a large shallow saucepan and add the fish and minced garlic
  4. Simmer with the lid on for 15 minutes
  5. Preheat the oven to 180 oC
  6. Remove the fish from the pan but retain the milk
  7. Remove any skin from the fish and cut into chunks
  8. Melt the remaining half of the dairy free spread
  9. In large measuring jug place the flour and the melted dairy free spread
  10. Stir to form a paste
  11. Pour in the milk and stir
  12. Pour the mixture into a small saucepan and bring to the boil, stirring continuously
  13. Season to taste and stir in the parsley
  14. Stir the fish chunks into the sauce
  15. Pour into a casserole dish and top with the mashed potatoes
  16. Bake in the oven for 20 minutes

Gluten and Dairy Free Beer Battered Fish

Description

I’ve never made beer battered fried fish before but thought I would give it a go for everyone who is missing fish and chips as a little treat now they are gluten/and or dairy free. I had a bottle of gluten free beer in the cupboard but don’t worry if you don’t have any you can make this recipe using water instead.

For the batter:

  • 100g gluten free self-raising flour
  • 100g cornflour or potato flour
  • 300ml gluten free beer
  • salt and pepper for seasoning

For the fish:

  • 4 x 150g cod or haddock fillets
  • 2 tablespoons gluten free plain flour

Method

  1. To make the batter whisk together the beer and flours
  2. Season with salt and pepper
  3. Heat either a deep fryer or pot of oil to 180 oC
  4. Pat the fish fillets dry with kitchen towel and then dust in the flour
  5. Dip the fish in the better then straight in the hot oil
  6. Cook for 4 minutes on each side until the fish is crisp and golden in colour
  7. Serve with chips and mushy peas for the true chip shop experience

A quick and simple little recipe I put together one night when I didn’t have a whole lot of ingredients in the house. I love fish cakes but I hate making them – there is nothing more fiddly than dipping them in the egg and breadcrumbs. I always seem to end up with breadcrumbed fingers instead! This time I decided to skip the coating and just cook them as is – turned out pretty well.

Gluten and Dairy Free Salmon Fish Fingers

Who said fish fingers were just for kids? This version uses salmon rather than the traditional cod and polenta crumbs rather than breadcrumbs to make them gluten free.

Kids and adults will love them. I served mine with my Lemon and Chilli stir fry sauce recipe poured over some sweet potato and buckwheat noodles.
