Gluten, Dairy and Egg Free Mint Chocolate Mousse

I often find it easier (and quicker) to bake a cake rather than make a gluten and dairy free dessert.  I always tend to make dessert recipes that involve making pastry, baking things, time to set etc.  I’m working on a few quicker dessert recipes that you can put together quickly.

This recipe is based around adding flavours to whipped coconut cream to make a mousse like consistency.  I’ve gone with adding in chocolate and mint – a traditional combination.  I think I’m also try out some fruit flavoured mousses as I’ve only made chocolate and peanut butter mousse so far that is gluten and dairy free.

The other easy desserts I’m working on include some layered sundae/parfait cups and a few more mug cakes.  Hopefully you will see them appearing on the website soon.

I have my parents visiting tomorrow for lunch so going to try and find time to try out my new muffin recipe – spiced pineapple.  Think a lovely sponge with ginger, cinnamon and crushed pineapple – fingers crossed it works out well.

Gluten, Dairy & Egg Free Chocolate Cashew Pudding

This recipe seems like it has been a long time coming for a few reasons.  I got these beautiful little espresso cups for my birthday in August from my lovely friend who lives in the Basque region of Spain.  I have been waiting to use them in a photograph for the website as they are so pretty – I love the red, green and yellow colour combination.

I also first made this pudding about 6 months ago, wrote out the recipe as a draft post on my website and then never got round to making it again to photograph.

So it seemed the perfect combination to pair up the cups I’ve been waiting to use for 4 months with the 6 month old recipe!

I have a real sweet tooth after lunch – no matter what I eat I always seem to have space for a little chocolate treat.  This pudding is perfect for packed lunches or as a little dessert.  It is lovely and rich and creamy without being loaded with sugar.  Best of all it only takes a couple of minutes to prepare.

Gluten, Dairy & Egg Free Chocolate Cashew Pudding

Serves 2

Ingredients

  • 2 tablespoons cashew nut butter
  • 4 tablespoons dairy free milk
  • 2 teaspoons cocoa powder
  • 2 teaspoons maple syrup or honey
  • chopped cashew nuts, to top

Method

  1. Whisk together the cashew nut butter, dairy free milk, cocoa powder and maple syrup/honey
  2. Divide between two dishes and top with the chopped cashew nuts
  3. Store in the fridge until you are ready to enjoy

Gluten, Dairy & Egg Free Chocolate Cinnamon Banana Pudding

Serves 4

Ingredients

  • 1 banana
  • 340g soft silken tofu
  • 30g icing sugar
  • 5 tablespoons cocoa powder
  • 3 tablespoons dairy free milk
  • 2 teaspoons ground cinnamon

Method

  1. Place the banana, tofu, icing sugar, cocoa powder, milk and cinnamon in a blender
  2. Blitz until creamy and smooth
  3. Divide between 4 serving dishes and store in the fridge until you are ready to use

Description

Key Lime Pie is the perfect dessert to enjoy on a summer evening – fresh and zesty, perfect after dinner or served at a BBQ. I’ve used a blend of cashew nuts and coconut cream to get my topping for this pie – not your traditional key lime pie ingredients but it still tastes great.

Ingredients

For the base:

  • 200g gluten free digestive biscuits
  • 100g dairy free dairy free spread, melted

For the topping:

  • 120g cashew nuts
  • 240g coconut cream
  • 2 tablespoons cornflour
  • 120ml fresh lime juice
  • zest of one lime
  • 60ml maple syrup or honey

Method

  1. Preheat the oven to 150 oC
  2. Crush the digestives into fine crumbs then stir in the melted dairy free spread
  3. Line a 6″ by 6″ cake tine with tin foil
  4. Press the crumbs firmly into the base of the cake tin
  5. Bake for 10 minutes
  6. Place the cashew nuts, coconut cream, cornflour, lime juice, lime zest and maple syrup into a blender and blitz until smooth
  7. Pour over the crumb base and bake in the oven for 20 minutes
  8. Remove from the oven and allow to cool
  9. Refrigerate for 4 hours then cut into 9 bars
  10. I decorated mine with lime slices, some icing sugar and a sprinkle of extra lime zest

Description

I find it difficult to trying to find dairy free alternatives to double cream. Two of the ingredients I use a lot as substitutes are peanut butter and chilled coconut milk. I have been trying to find a chocolate mousse style dessert that was gluten, dairy and egg free and was pleased with the result of this attempt. It’s pretty rich so you only need a little amount – I’m thinking I need to use this in some kind of chocolate peanut butter pie recipe.

Ingredients

  • 215ml coconut milk, chilled
  • 65g smooth peanut butter
  • 115g dairy free dark chocolate, melted

  1. Open the can of coconut milk and mix together then chill in the fridge
  2. Beat together the chilled coconut milk and peanut butter
  3. Add in the melted chocolate and stir well
  4. Pour into individual shot glasses or espresso cups
  5. Chill in the freezer for 2 hours to set
  6. Remove from the freezer for 5 minutes before enjoying
