Gluten and Dairy Free Lemon Sugar Crepes

Serves 2

Ingredients

  • 100g gluten free plain flour
  • 1 egg
  • 300ml dairy free milk
  • 1/2 tablespoon caster sugar
  • 1 lemon, zested and juiced
  • extra sugar for topping your crepes

Directions

  1. Mix the flour and sugar together
  2. Add the lemon zest and egg, beat well
  3. Gradually add the milk stirring until a smooth batter is formed
  4. Heat a little olive oil in a shallow pan over a medium heat
  5. Pour in a small amount of the batter, just enough to cover the base of the pan
  6. Cook for about 2 minutes on each side
  7. Remove the crepe from the pan and fold into quarters
  8. Repeat until you have used all your batter
  9. Top with the lemon juice and sprinkle with sugar

Though crêpes are great any time of year, it’s a tradition in France to serve them on February 2, which was originally known as Virgin Mary’s Blessing day and then became known as avec Crêpe Day, referring to the ritual of offering crêpes.

Gluten and Dairy Free Strawberry and Chocolate Crepes

Description

Morning everyone, hope you are having a relaxing Sunday. I had some leftover dairy free chocolate sauce from another recipe and a punnet of strawberries in the fridge so I decided to make some crepes for breakfast.

Ingredients

For the crepes:

  • 100g gluten free plain flour
  • 1 egg
  • 300ml dairy free milk
  • 1/2 tablespoon caster sugar

For the chocolate sauce

  • 15g cocoa powder
  • 35g brown sugar
  • 80ml dairy free milk
  • 85g dairy free dark chocolate

Method

  1. Start making the chocolate sauce by placing the chocolate, cocoa powder, brown sugar and milk in a saucepan
  2. Place over a medium heat and stirring until the ingredients are melted and well combined
  3. Bring to the boil and then simmer for 5 minutes, set aside to cool slightly
  4. Mix the flour and sugar together
  5. Add the egg and beat well
  6. Gradually add the milk stirring until a smooth batter is formed
  7. Heat a little olive oil in a shallow pan over a medium heat
  8. Pour in a small amount of the batter, just enough to cover the base of the pan
  9. Cook for about 2 minutes on each side
  10. Remove the crepe from the pan and spread on some of the dairy free chocolate sauce
  11. Fold into quarters and top with strawberries and a little more chocolate sauce
  12. Serve immediately
