Gluten and Dairy Free Chocolate Orange Cookies

Ingredients

  • 170g dairy free spread
  • 130g brown sugar
  • 1 egg
  • 250g gluten free plain flour
  • zest of 1 orange
  • 200g dairy free dark chocolate

Method

  1. Beat the brown sugar and dairy free spread together until light and fluffy
  2. Add in the egg
  3. Stir in the flour and orange zest
  4. Shape into two logs about 2.5″ diameter and about 7″ long
  5. Wrap each log in clingfilm and chill in the fridge for a couple of hours
  6. Preheat the oven to 180 oC
  7. Slice ach log into 9 cookies and please on cookie sheets
  8. Bake in the oven for 15 minutes
  9. Remove from the oven and allow to cool completely
  10. Melt the chocolate and dip half of each cookie in the melted chocolate
  11. Place on a sheet of baking parchment and allow to set

Gluten and Dairy Free Spiced Lemon and Sultana Cookies

Description

Nothing smells better than warm cinnamon coming from the oven and these cookies baking in the oven smell amazing. The sweetness of the spices are balanced out by the zestiness of the lemon. As you probably noticed from the amount of my recipes that contain cinnamon I’m a huge fan. If you aren’t as crazy about cinnamon as I am you can omit the spices from these cookies and still end up with a lovely lemon and sultana cookie.

If you don’t finish these cookies or want to make something in advance they actually freeze very well. Either defrost them at room temperature for a few hours before enjoying or pop in the microwave for 30 seconds – the slightly warm cookie tastes very nice.

  • 80g caster sugar
  • 1 egg
  • 175g gluten free self-raising flour
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 75g sultanans
  • zest of one lemon

Method

lemon cookies

  1. Preheat the oven to 180 oC
  2. Cream together the dairy free spread and caster sugar until light and fluffy
  3. Add the eggs and beat until well combined
  4. Stir in the gluten free flour, cinnamon, ginger, nutmeg, sultanas and lemon zest
  5. Divide the cookie dough into 8 balls
  6. Place on a line baking sheet and flatten into discs
  7. Bake for 15 minutes
  8. Place on a wire rack to cool

Gluten and Dairy Free Mocha Cookie Ice Cream Sandwiches

Description

I feel a bit cheeky with this recipe as I’ve already shared the recipe for my vanilla ice cream and the mocha cookie recipe. So this is more of a serving suggestion than a new recipe! I had some leftover mocha cookie dough in the freezer and some vanilla ice cream so I decided to make this for dessert.

You can make this recipe with little effort if you use shop bought gluten and dairy free ice-cream and cookies.

Ingredients

For the cookies:

  • 280g gluten free plain flour
  • 1 teaspoon xanthan gum
  • 1 teaspoon baking powder
  • 2 teaspoons cornflour
  • pinch of salt
  • 2 teaspoons dairy free cocoa powder
  • 1 tablespoon instant coffee
  • 170g dairy free spread, melted
  • 150g light brown sugar
  • 100g caster sugar
  • 1 egg, beaten
  • 1 egg yolk
  • 100g dairy free dark chocolate chips

For the ice cream:

  • 5 egg yolks
  • 50g caster sugar
  • 500ml dairy free milk
  • 250ml dairy free cream
  • vanilla extract or vanilla pod

Method

To make the cookies:

  • Place all the ingredients in a large bowl and mix until well combined
  • Wrap the cookie dough in clingfilm and refrigerate for an hour or pop in the freezer for 20 minutes
  • Preheat the oven to 180 oC
  • Divide the cookie dough into 15 balls
  • Place on two baking sheets and flatten slightly
  • Bake in the oven for 15 minutes
  • Remove from the oven and allow to cool

To make the ice-cream:

  • Whip the egg yolks, vanilla and sugar together until thick and creamy
  • Place the milk into a medium sized saucepan and bring to the boil
  • Add the milk to the eggs and sugar while stirring continuously
  • Return to the pan and cook over a low heat until thickened
  • Remove from the heat and allow to cool
  • Chill in the fridge
  • Churn in an ice-cream maker for 20 minutes or place in the freezer

To assemble:

  • Sandwich two cookies together with the ice cream
  • Eat immediately

Gluten and Dairy Free Mocha Cookies

Description

Coffee and chocolate just go together so well and is the inspiration for this recipe. These cookies are slightly crisp on the outside and soft on the inside, perfect! Everyone deserves a little cookie for a treat and hopefully these gluten and dairy free ones hit the spot.

If you don’t want 15 cookies at once you can freeze the raw cookie dough for another time.

This is kind of based on the giant cookies that Millie’s cookies sell for birthdays etc – except that this version is gluten and dairy free. It is double chocolate chip and tastes great as is or can be iced with chocolate buttercream. If it is for a birthday you could always bake two of these cookies and sandwich them together.

  • 3 tablespoons vegetable oil
  • 30g dairy free spread
  • 100g brown sugar
  • 50g caster sugar
  • 1 egg
  • 95g gluten free plain flour

  • 1/2 teaspoon baking powder
  • 70g dairy free chocolate chips

Method

  1. Preheat the oven to 170 oC
  2. Beat together the melted chocolate, vegetable oil, dairy free spread, brown sugar, caster sugar and egg
  3. Stir in the flour, cocoa powder, baking powder and chocolate chips
  4. Grease an 8″ tin
  5. Press the cookie dough into the pan
  6. Bake for 18 minutes
  7. Allow to cool then cut into wedges

Gluten and Dairy Free Granola Cookies

Description

You can never go wrong with a gluten and dairy free cookie. This time I’ve made some hearty cookies by adding in some gluten free granola. This is the type of cookie I would have with fruit and yoghurt for breakfast – any excuse to eat biscuits for breakfast.

  • 50g caster sugar
  • 60g brown sugar
  • 1 egg
  • 1 teaspoon ground cinnamon
  • 110g gluten free plain flour
  • 1 teaspoon baking powder

  • 85g dairy free chocolate chips or sultanas, optional
  • 30g chopped nuts, optional

Method

  1. Preheat the oven to 180 oC
  2. Cream together the dairy free spread, caster sugar and brown sugar
  3. Stir in the egg and ground cinnamon
  4. Stir in the plain flour, baking powder, granola, chocolate chips/sultanas and nuts, if using
  5. Divide into 12 portions and drop on a baking sheet
  6. Bake for 12 minutes
  7. Allow to cool

Gluten and Dairy Free Cinnamon Sugar Cookies

These cookies are a lovely little sweet treat. They are lighter than light in the middle with a slight crispness to the outside. They are also really quick and easy to prepare making them a winner every time.

For the cookies:

  • 120g dairy free spread
  • 160g caster sugar
  • 1 egg
  • 325g gluten free plain flour
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon baking soda

For the cinnamon sugar:

  • 2 tablespoons caster sugar
  • 2 teaspoons ground cinnamon

Method

  1. Preheat the oven to 200 oC
  2. Beat together the dairy free spread, caster sugar and egg
  3. Stir in the gluten free flour, cream of tartar and baking soda
  4. Place the cookie dough in the fridge to chill for 15 minutes
  5. In a small bowl mix together the 2 tablespoons of caster sugar and ground cinnamon
  6. Divide the cookie dough into 12 small balls
  7. Roll the cookie dough balls in the cinnamon sugar
  8. Place on a lined baking sheet and flatten gently into disc shapes
  9. Bake in the oven for 10 minutes
  10. Place on a wire rack to cool

Gluten and Dairy Free Banana and Peanut Butter Cookies

Description

Two of my favourite baking ingredients made into a cookie – banana and peanut butter! These cookies are simple to make and are also egg free! The dough can be prepared in advance and kept in the freezer until you are ready to use it. I tend to make a double batch of these cookies, divide into four lots and keep in the freezer so I can enjoy freshly baked cookies.

  • 1 teaspoon baking powder

Method

  1. Preheat the oven to 180 oC
  2. Beat together the mashed banana, peanut butter, brown sugar and caster sugar
  3. Stir in the cinnamon, flour, baking powder and chocolate chips
  4. Shape the dough into a log and cut into 15 cookies
  5. Place the cookies on a parchment lined baking sheet
  6. Bake in the oven for 12 minutes
  7. Allow to cool before enjoying
