Gluten and Dairy Free Cajun Chicken

Serves 2

Ingredients

  • 2 chicken breasts, cut into strips
  • 1 teaspoon oregano
  • 2 teaspoons paprika
  • 1 teaspoon mild chilli powder
  • 1 garlic clove, minced
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • salt and pepper for seasoning

Method

  1. Place the chicken strips and all the herbs/spices in a large bowl and stir until well coated
  2. Leave to marinade in the fridge for a couple of hours
  3. Heat a drizzle of olive oil in a shallow or medium heat
  4. Cook the chicken until the juices run clear, about 15 minutes
  5. Serves with chips and coleslaw

Gluten and Dairy Free Spanish Chicken Stew

As it has rained solidly all day I thought I would share a recipe what reminds me of sunny holidays in Spain.  This can be easily cooked and on the table in about 30 minutes.  The chorizo comes with the usual warning to double check the ingredients as some seem to have milk in the ingredients list, I got a suitable one in Tesco.  Link to the recipe is at the bottom of the post.

It was an exciting day for me today as I got to see my newly stabilised ankle for the first time, I love all that stuff.  A few of you have asked about my operations and Gordon (who my first book is dedicated to) so thought I would share a photo.  I have Ehlers Danlos Syndrome which causes my joints to be extremely hyper mobile and dislocate easily.

Professor Gordon MacKay has been amazing and basically rebuilt me over the last 10 years.  Gordon has invented an internal brace which is used in surgeon to support soft tissue and dramatically reduces recovery time.  To put it into perspective I’ve had my ankle fully fixed only 5 days ago I can walk perfectly with no support or crutches – he is such an amazing surgeon and I’m so grateful he is my doctor.  You can read more about his awesome invention here https://www.mackayclinic.co.uk

Gluten and Dairy Free Spanish Chicken Stew

Serves 2

Ingredients

  • 2 chicken breasts, cut into cubes
  • 100g chorizo, double check it is dairy free
  • 1 onion, finely diced
  • 1 pepper, cut into chunks
  • 2 garlic cloves, minced
  • 1/2 teaspoon chilli powder
  • 2 teaspoons smoked paprika
  • 1 tablespoon tomato puree
  • 100ml chicken or vegetable stock
  • 300ml passata
  • 2 teaspoons basil
  • salt and pepper for seasoning

Method

  1. Heat a drizzle of olive oil in a shallow pan
  2. Cook the chicken and chorizo for 5 minutes
  3. Stir in the onion, pepper, garlic, chilli and paprika
  4. Cook for 5 minutes
  5. Stir in the stock, tomato puree and passata
  6. Bring to the boil and simmer for 15 minutes
  7. Season with salt and pepper and stir in the basil
  8. Serve with rice

Hope you are all having a great weekend and enjoying the sunshine.  I’ve had a really busy week at work helping to organise and be a presenter at a big staff conference.  I’ve also got an unstable ankle so going in for surgery next week to get it fixed.  I’ve also been having a few problems with Facebook as well so sorry if I haven’t answered your comments, the last two weeks of posts seem to have disappeared!

We had a BBQ on Friday night, top tip – Marks and Spencer had loads of gluten and dairy free choices in the three for ten pound range.  We had lemon and herb salmon, Moroccan lamb burgers, chorizo burgers and sausages.

Gluten and Dairy Free Cajun Chicken Wraps

Serves 2

Ingredients

  • 2 chicken breasts, cut into cubes
  • 1 teaspoon oregano
  • 2 teaspoons paprika
  • 1 teaspoon mild chilli powder
  • 1 garlic clove, minced
  • 1 teaspoon onion powder
  • 1 teaspoon thyme
  • 1/2 teaspoon ground cumin
  • salt and pepper for seasoning
  • 1 tablespoon mayonnaise
  • handful of spinach
  • 2 spring onions, sliced
  • 1 tablespoon dairy free cheese, grated
  • 2 gluten free tortilla wraps
  • fresh coriander

Method

  1. Place the chicken, oregano, paprika, chilli powder, garlic, onion powder, thyme, cumin and seasoning in a large bowl and stir until well coated
  2. Heat a drizzle of olive oil in a large shallow pan over a medium heat
  3. Add the chicken and cook for 12 minutes
  4. Heat the tortilla wraps in a hot pan for 30 seconds on each side
  5. Spread on the mayo, top with the cajun chicken, spinach, cheese, spring onions and a sprinkle of coriander

Hope you are all enjoying the weekend. I’m down in London visiting friends. So far I’ve had loads of amazing gluten and dairy free food. I’ll share that in a post later in case anyone is heading there soon and is after a few recommendations.

Today’s recipe is for some simple chicken and chorizo kebabs.  I had these for dinner with some Mediterranean vegetable rice as the kebab flavouring reminded me of paella.

They are also perfect cold for lunch the next day.

Ingredients

  • 2 chicken breasts, cut into cubes
  • 100g chorizo sausage, cut into slices, double check this is dairy free
  • 1 tablespoon olive oil
  • 1 teaspoon garlic puree
  • 2 teaspoons smoked paprika
  • 1 teaspoon oregano

Method

  1. In a large bowl place the olive oil, garlic purée, smoked paprika and oregano, mix until combined
  2. Season with salt and pepper
  3. Stir in the chicken and chorizo, you can leave to marinade in the fridge if you have time
  4. Thread onto kebab skewers
  5. Heat a large shallow pan or grill and cook the kebabs for 15 minutes, turning during once or twice during cooking

Gluten and Dairy Free Honey Chilli Chicken Kebabs

These kebabs are probably a bit out of season as they would make a perfect summer BBQ dish.  Unfortunately I developed this recipe a little late for outside cooking in Scotland!

This recipe contains gluten free soy sauce, Tamari, I found this in the free from isle in Tesco so hopefully you can get hold of it easily.  Interestingly enough the last time I had sushi in a restaurant they had gluten free sushi with a tamari dipping sauce.

Gluten and Dairy Free Honey Chilli Chicken Kebabs

Ingredients

  • 4 chicken breasts, cut into cubes
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 tablespoons tamari (gluten free soy sauce)
  • 2 garlic cloves, minced
  • 1 small red chilli, finely chopped
  • salt and pepper, for seasoning

Method

  1. Whisk together the olive oil, honey, tamari, garlic, chilli and seasoning
  2. Add the chicken to the seasoning and allow to marinade in the fridge for a couple of hours if possible
  3. Pop the chicken onto 4 skewers
  4. Place a grill pan on a medium heat and brush with a little olive oil
  5. Cook the skewers for 12-15 minutes or until the juices run clear

Gluten and Dairy Free Paprika Chicken with Lemon & Leek Spaghetti

Description

Pasta is such an easy meal to prepare and there are some great gluten free options out there to try. Rather than go for the traditional tomato based sauce I decided to try and make something lighter so went with a simple leek and lemon sauce. To compliment the spaghetti I served it with a piece of paprika coated chicken. Perfect for a quick, simple but tasty gluten and dairy free mid-week dinner.

Ingredients

  • 4 chicken breasts
  • 200g gluten free spaghetti
  • salt and pepper for seasoning
  • 1 tablespoon paprika
  • 1 teaspoon basil
  • 1 teaspoon mild chilli powder
  • 3 garlic cloves, minced
  • 1 leek, finely sliced
  • 200ml chicken stock
  • 3 tablespoons lemon juice
  • 2 teaspoons parsley
  • 1 teaspoon dairy free spread

  1. Place the spaghetti in a large pan of boiling water and cook for 12 minutes or per the packet instructions
  2. Flatten each of the chicken breasts into thin chicken steaks
  3. Mix together the paprika, chilli and basil
  4. Rub onto the chicken
  5. Heat a drizzle of oil oil in shallow pan over a medium heat
  6. Cook the chicken for 3-4 minutes on each side
  7. In another pan add a drizzle of olive oil, the garlic and leek
  8. Saute for a couple of minutes
  9. Add the chicken stock and lemon juice
  10. Season with salt and pepper
  11. Simmer for 2 minutes
  12. Add in the teaspoon of dairy free spread and parsley
  13. Stir the spaghetti through the sauce until well coated
  14. Serve with the chicken
