Description

Cheesecake isn’t the obvious choice for people on a gluten or dairy free diet as nearly every ingredient contains one or the other. Luckily for us I think dairy free cream cheese (I use Scheese) and gluten free digestive biscuits make great cheesecake. Rather than make one large round cheesecake topped with fruit I decided to make a square cheesecake, swirl the fruit through it and cut into bars.

Due to my obsession my peanut butter I’m already thinking of a snickers type cheesecake bars – chocolate cheesecake with swirls of caramel and peanut butter, look out for that recipe soon!

Ingredients

For the base:

  • 100g dairy fee spread, melted
  • 200g gluten free digestive biscuits, crushed

For the cheesecake:

  • 450g dairy free cream cheese
  • 1 egg
  • 50g caster sugar
  • 1 teaspoon vanilla extract, optional

For the strawberry swirl:

  • 200g strawberries, diced
  • 50g caster sugar
  • 1 tablespoon cornflour dissolved in 1 tablespoon warm water

Method

 

  1. Preheat the oven to 150 oC
  2. Line an 8″ by 8″ cake tin with tinfoil
  3. Place the strawberries in a small saucepan
  4. Cook over a medium heat for 4 minutes
  5. Stir in the cornflour and sugar
  6. Cook for another couple of minutes
  7. Set aside to cool
  8. Mix together the crushed digestive biscuits and melted dairy free spread
  9. Press into the base of the cake tin
  10. Bake in the oven for 5 minutes
  11. Stir together the cream cheese, egg, caster sugar and vanilla until smooth
  12. Pour over the biscuit mix and drop spoonfuls of the strawberry mix on top
  13. Swirl with a knife to create a marbled effect
  14. Bake in the oven for 35 minutes
  15. Allow to cool to room temperature
  16. Chill in the fridge for 4 hours
  17. Cut into 9 bars

I absolutely love cheesecake and already have quite a few gluten and dairy free cheesecake recipes on here already. To celebrate the launch of my e-book on iTunes I thought I would share with you the raspberry and lime gluten and dairy free I made for my family this weekend.

Ingredients

For the base:

  • 200g gluten free digestive biscuits, crushed
  • 100g dairy free spread, melted

For the filling:

  • 340g dairy free cream cheese
  • 120g caster sugar
  • 120g dairy free yoghurt
  • 30g gluten free plain flour
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 90ml lime juice

For the topping:

  • 200g raspberries
  • zest of one lime

Method

  1. Preheat the oven to 180 oC
  2. Grease a 9″ springform tin
  3. Mix together the crushed digestive biscuits and melted dairy free spread
  4. Press into the bottom of the tin and bake for 10 minutes
  5. Beat together the cream cheese, sugar, yoghurt, flour, vanilla, eggs and lime juice
  6. Pour over the crumb base
  7. Bake for 15 minutes
  8. Turn the oven temperature down to 120 oC and bake for another 45 minutes
  9. Allow to cool to room temperature
  10. Chill in the fridge for at least 4 hours
  11. Remove from the cake tin
  12. Top with the raspberries and lime zest

I made a couple of gluten and dairy free cheesecakes this weekend – one a snickers style cheesecake bar which I photographed for my new book and this one. This cheesecake kind of tastes like a cinnamon bun swirled deliciously through a baked New York cheesecake.

  • 45g dairy free spread

  2. Grease a 6″ round cake tin
  3. Start by making the cinnamon swirl
  4. Place the brown sugar, flour, cinnamon and dairy free spread
  5. Cook for a medium heat until melted and well combined
  6. Set aside to cool
  7. Mix together the crushed digestive biscuits and melted dairy free spread
  8. Press into the base of the cake tin
  9. Bake in the oven for 10 minutes
  10. Stir together the cream cheese, egg, caster sugar and vanilla until smooth

The inspiration for this recipe came from the Allergy & Free From Show last week. I was discussing favourite free from recipes and my love of cheesecake with the guys at the Udi’s stand. They gave me a packet of their new gluten and dairy free oreo style cookies to so I could experiment with them as a cheesecake base – and this recipe is the result! The cherry choc chip oreo style cheesecake – all gluten and dairy free.

  • 35g dairy fee spread, melted
  • 14 gluten and dairy free Oreo style biscuits, I used Udi’s

For the cheesecake:

  • 450g dairy free cream cheese
  • 1 egg
  • 50g caster sugar
  • 1 teaspoon vanilla extract, optional
  • 75g dairy free chocolate chips

For the topping:

  • 6 tablespoons cherries

Method

  1. Preheat the oven to 150 oC
  2. Line an 2lb loaf tin with tinfoil
  3. Place the biscuits in a food processor and blend
  4. Mix together the crushed biscuits and melted dairy free spread
  5. Press into the base of the loaf tin
  6. Bake in the oven for 5 minutes
  7. Stir together the cream cheese, egg, caster sugar and vanilla until smooth
  8. Stir in the chocolate chips
  9. Pour over the biscuit mix
  10. Bake in the oven for 35 minutes
  11. Allow to cool to room temperature
  12. Chill in the fridge for 4 hours
  13. Cut into 6 bars
  14. Top with the cherries

Gluten and Dairy Free Strawberry and Chocolate Cheesecake

It’s been another busy week, I’ve managed to tear my bicep, in my right arm of course! My surgeon tells me it is an injury common in weight lifters, unfortunately my EDS has meant the only weight I lifted to tear my bicep was the blooming vacuum cleaner! I really need to think of a better story to tell people when they ask what is wrong with my arm.

Anyway, enough self pity from me! I have friends staying for a few days so I decided to make gluten and dairy free cheesecake for everyone to enjoy for pudding. I had originally planned to make a banana and peanut butter cheesecake but the bananas weren’t ripe enough so I went with strawberry and chocolate, another winning combination.

Only one day left until the our visit to the Allergy and Free From Show in Glasgow, expect a post with lots of pictures and talk of what I ate/bought/sampled.
