Gluten and Dairy Free Spiced Almond and Sultana Cake

Ingredients

  • 125g dairy free spread
  • 50g caster sugar
  • 3 eggs, separated
  • 40g gluten free self-raising flour
  • 75g ground almonds
  • 75g sultanas
  • 2 teaspoons mixed spice

Method

  1. Preheat the oven to 180 oC
  2. Grease and line an 8″ round cake tin
  3. Whisk the egg whites until stiff peaks form
  4. In another bowl beat together the dairy free spread and caster sugar until light and fluffy
  5. Stir in the egg yolks, flour, ground almonds and mixed spice
  6. Gently fold in the egg whites
  7. Stir though the sultanas
  8. Pour into the cake tin and bake for 45 minutes
  9. Allow to cool completely before slicing and serving

Description

You can probably gather from the amount of recipes on the website that I make a lot of cake! I’m always after new recipes – this cake is loosely based on a traditional Jewish cake that is made from cold tea and honey. The cake is moist and sticky due to the honey and goes lovely with some dairy free custard for the ultimate winter warmer pudding.

  • 150g brown sugar
  • 1 egg
  • 280ml tea (made up with 2 teabags)
  • 150ml vegetable oil
  • 180g honey
  • 330g gluten free self-raising flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg

Method

  1. Preheat the oven to 160 oC
  2. Grease and line an 8″ cake tin
  3. Mix the sugar, egg, tea, oil and honey together in a large bowl
  4. Stir in the flour, cinnamon, ginger and nutmeg
  5. Pour into the cake tin and bake for an hour
  6. Remove from the oven and cake tin
  7. Allot to cool before slicing

Description

A simple but tasty little cake, the sweetness of the peaches is a perfect match to the warm spice of the ginger. This cake would make a lovely summer dessert served with a scoop of dairy free ice-cream.

  • 2 teaspoons ground cinnamon
  • 60g dairy free spread
  • 100g caster sugar
  • 2 eggs
  • 125ml dairy free milk
  • 1 tablespoon dairy free natural yoghurt
  • 4 peaches, peeled, stoned and cubed

Method

  1. Preheat the oven to 180ºC
  2. Beat together the dairy free spread and caster sugar until light and fluffy
  3. Whisk in the eggs
  4. Stir in the flour, ginger, cinnamon, milk and natural yoghurt
  5. Gently fold in the chunks of peach
  6. Pour into the cake tin and bake for 55 minutes
  7. Allow to cool completely before

Gluten & Dairy Free Rhubarb & Ginger Loaf

Description

I had some rhubarb in the fridge and rather than doing my usual rhubarb crumble I decided to have a go at making a rhubarb and ginger loaf cake. This recipe is the result of trying that out – I’m thinking it could also work with some stewed apples and cinnamon.

  • 400g rhubarb
  • 4 tablespoons water
  • 4 tablespoons honey
  • 60g dairy free spread
  • 1 teaspoon cinnamon
  • 1 teaspoon grated stem ginger
  • 1/2 teaspoon nutmeg
  • 2 teaspoons baking powder
  • 1 teaspoon xanthan gum
  • 100g ground rice
  • 140g gluten free self raising flour
  • 2 eggs, beaten

Method

  1. Preheat the oven to 180 oC
  2. Place the rhubarb, water and honey in a medium sized saucepan
  3. Cook the rhubarb for about 10 minutes, until soft
  4. Stir in the dairy free spread, cinnamon, ginger and nutmeg
  5. In a large bowl mix together the baking powder, xanthan gum, ground rice and flour
  6. Stir in the eggs and rhubarb mix until well combined
  7. Pour into a greased loaf tin
  8. Bake in the oven for 40 minutes
  9. Allow to cool before slicing – tastes great with a little strawberry jam
