Gluten and Dairy Free Banana Oat Brownies

Hello everyone

One of my friends bought a gluten and dairy free chocolate brownie cake mix so he could make me a cake when I visited.  Even though I loved the thought he panicked and decided it was still a step to far and just gave me the cake mix still in the packet.

I made the brownies over Christmas and added some mashed banana to them.  I loved the combination and decided to try and make my own banana oat brownies.  I hope you like them.

Gluten and Dairy Free Banana Oat Brownies

Serves 9

Ingredients

  • 85g dairy free spread, melted
  • 135g gluten free oats
  • 115g gluten free plain flour
  • 1 tablespoon cocoa powder
  • 1 teaspoon baking powder
  • 200g light brown sugar
  • 2 eggs
  • 3 bananas, mashed

Method

  1. Preheat the oven to 180 oC
  2. Line an 8″ by 8″ cake tin with tinfoil
  3. Whisk together the melted dairy free spread, brown sugar, eggs and mashed banana
  4. Stir in the oats, flour, cocoa powder and baking powder
  5. Pour into the cake tin and bake for 35 minutes
  6. Remove from the oven and allow to cool in the cake tin for 30 minutes
  7. Remove from the tin and allow to cool completely before cutting into 9 squares

Gluten and Dairy Free Brownie S’mores Pie

Hello

The final Bonfire Night recipe inspired by a campfire favourite – the S’more!  I’ve made this into a gluten and dairy free dessert.  The bottom is a crisp biscuit base topped with fudgey, chocolatey brownie and then finished off with some toasted marshmallows.  The ultimate Bonfire Night dessert.

This pie is:

  • crisp biscuit
  • sticky brownie
  • gooey marshmallows

Gluten and Dairy Free Brownie S’mores Pie

Ingredients

For the base:

  • 200g gluten free digestive biscuits
  • 100g dairy free spread

For the brownies:

  • 170g dairy free chocolate, melted
  • 115g dairy free spread
  • 225g light brown sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 170g gluten free plain flour

For the topping:

  • 2 handfuls of marshmallows

Method

  1. Preheat the oven to 180ºC
  2. Line a 8” by 8” tray bake tin
  3. Mix together the crushed digestive biscuits and melted dairy free spread
  4. Press into the base of the cake tin
  5. Bake in the oven for 10 minutes
  6. Cream together the dairy free spread and sugar
  7. Stir in the melted chocolate
  8. Beat in the eggs
  9. Stir in the flour and vanilla extract
  10. Pour into the cake tin
  11. Bake in the oven for 25 minutes
  12. Remove from the oven and switch the grill on to high
  13. Top the pie with a  sprinkling of marshmallows
  14. Grill for about a minute or until the marshmallows are lightly browned
  15. Allow to cool in the tin before cutting into slices

Sorry I haven’t posted a cake recipe for a while but I’ve been working on my new book which contains 50 brand new gluten and dairy free cake recipes. With all the baking going on for the new book I’ve been enjoying creating other recipes for the website.

As it’s my birthday today I thought I would share a new cake recipe – you should always share cake joy on your birthday. I actually made these at the weekend and took them with me on our day out at the Edinburgh Fringe Festival. I’m known for always having gluten and dairy free cakes with me – this time we sat in a pub watching a comedian enjoying a sneaky little brownie.

I love the rich chocolatey taste of brownies and what can make them better but the addition of some dairy free salted caramel sauce. You might not want to use all of the caramel sauce so the remaining sauce can be stored in the fridge and reheated when you want to use the rest. You can also add more or less salt depending on your tastebuds.

Ingredients

For the salted caramel sauce:

  • 200ml coconut milk
  • 80g maple syrup
  • 2 teaspoons coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt

For the brownies:

  • 170g dairy free chocolate, melted
  • 115g dairy free spread
  • 225g light brown sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 170g gluten free plain flour

Method

To make the salted caramel sauce:

  • Place the coconut milk and maple syrup in a pan and simmer for 40 minutes
  • Stir in the coconut oil and cook for 5 minutes
  • Stir in the vanilla and salt and beat until glossy

To make the brownies:

  • Preheat the oven to 180ºC
  • Line a 6” by 6” tray bake tin
  • Cream together the dairy free spread and sugar
  • Stir in the melted chocolate
  • Beat in the eggs
  • Stir in the flour and vanilla extract
  • Pour into the cake tin
  • Pour the caramel sauce on top of the cake batter and then swirl in with a knife
  • Bake in the oven for 25 minutes
  • Allow to cool in the tin before cutting into slices

Gluten and Dairy Free Mint Crunch Brownies

I do like a good sticky brownie which probably explains why I have quite a few brownies recipes on here already but hey there is always room for one more. This time I’ve decided to go for mint crunch, if you can’t be bothered crushing up the mint sweeties then replace them with some peppermint extract, you’ll get the same flavour without the crunch.

Ingredients

  • 200g dairy free dark chocolate
  • 200g caster sugar
  • 150g dairy free spread
  • 2 eggs
  • 125g gluten free plain flour
  • 30g gluten free self-raising flour
  • 50g hard boiled mint sweets

Method

  1. Place the mint sweets in a small freezer bag and hit with the back of a spoon until you have small pieces of mint
  2. Preheat the oven to 150 oC
  3. Melt the chocolate either in the microwave or in a bowl over a pan of boiling water
  4. Beat together the caster sugar and dairy free spread until light and fluffy
  5. Add in the eggs and beat until well combined
  6. Stir in the melted chocolate, plain flour, self-raising flour and crushed mints
  7. Line a traybake tin with tinfoil
  8. Pour in the brownie mix
  9. Bake in the oven for 30 minutes
  10. Allow to cool in the tin for 1 hour
  11. Remove from the tin and allow to cool completely before slicing into 9 squares

Description

I love my brownies gooey and sticky – it makes for a tasty brownie but a bit of an ugly picture! I’ve taken my basic gluten and dairy free brownie recipe and folded through some beautiful raspberries. The sharpness of the raspberries perfectly offsets the sweetness of the chocolatey brownies.

  • 115g dairy free chocolate chips
  • 115g dairy free spread
  • 3 eggs
  • 200g light brown sugar
  • 2 tablespoons raspberries
  • 110g gluten free plain flour
  • 30g gluten free self raising flour

Method

  1. Line a 13 by 9 inch shallow baking tin with tinfoil leaving the edges over the tin so the brownie can be easily lifted out the pan
  2. Preheat the oven to 180 oC
  3. In a small pan or in the microwave, melt together the chocolate and the dairy free spread
  4. Leave aside to cool
  5. Beat together the eggs and sugar
  6. Stir in the chocolate mixture and flour
  7. Careful fold in the raspberries
  8. Pour into the pan and bake in the centre of the oven for 30 minutes
  9. Leave in the pan to cool
  10. Carefully lift out the pan and slice into squares
