Gluten and Dairy Free Granola with Apple Sauce

Description

This breakfast bowl can be made in advance as the granola will last for 2 weeks in an airtight container. You can either make the apple sauce for the topping by stewing a couple of apples or if you are after a quick breakfast you can use a shop bought apple sauce.

Note: the granola recipe will make about 8 portion of granola

Ingredients

  • 270g gluten free porridge oats
  • 4 tablespoons agave or honey
  • 2 tablespoons coconut or vegetable oil
  • 4 tablespoons water
  • 1 medium sized apple, peeled, cored and diced
  • 2 teaspoons ground cinnamon
  • 100g sultanas
  • 2 heaped tablespoons of chunky apple sauce

Method

  1. Preheat the oven to 150 oC
  2. Mix together the oats, agave, oil, water, cinnamon and chopped apples
  3. Spread out the oats on a lined baking sheet
  4. Bake for 30 minutes, stirring every 10 minutes
  5. Allow to cool
  6. Stir through the sultanas
  7. Fill two bowls with the granola and top with a the apple sauce

Gluten and Dairy Free Baked Apple & Cinnamon French Toast

Description

Make up this breakfast bowl and pop it in the oven while you hop in the shower. It is kind of a cross between french toast and a lighter version of bread pudding.

Ingredients

  • 2 slices of gluten free wholemeal bread
  • 150ml dairy free milk
  • 3 tablespoons apple sauce
  • 2 tablespoons maple syrup
  • 1 egg
  • 1 teaspoon ground cinnamon
  • 2 tablespoons sultanans

Method

  1. Preheat the oven to 180 oC
  2. Grease 2 individual ramekins
  3. In a medium sized bowl whisk together the milk, apple sauce, egg, cinnamon and maple syrup
  4. Stir in the sultanas
  5. Tear the bread into bite sized chunks and stir into the milk mixture
  6. Spoon into the 2 ramekins
  7. Bake in the oven for 25 minutes

Gluten and Dairy Free Baked Beans, Poached Egg and Chorizo

Description

A simple but tasty start to the day, just remember to check the chorizo you buy doesn’t contain milk.

Ingredients

  • 2 eggs
  • 300g baked beans
  • 100g chorizo, check it is dairy free
  • 1 teaspoon fresh chives

Method

  1. Dice the chorizo into small chunks
  2. Gently sauce in a small saucepan for a couple of minutes
  3. Bring a pan of water to the boil then reduce to a simmer
  4. Crack in each egg and poach for 3-6 minutes depending on how runny you like your yolk
  5. Heat the beans in the microwave for 2-3 minutes
  6. Split the beans between the 2 bowls, top with the poached eggs, chorizo and sprinkle over the chives
