Gluten and Dairy Free Raisin and Cinnamon Bagels

Ingredients

  • 570g gluten free bread flour
  • 2 tablespoons honey
  • 1 teaspoon salt
  • 7g dried active baking yeast
  • 400ml warm water
  • 30g dairy free spread
  • 2 tablespoons raisins
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking soda
  • 1.5 litres water

Method

  1. Place the bread flour, honey, salt, yeast, warm water, dairy free spread, raisins and cinnamon in a large bowl
  2. Mix together until you have a well combined dough
  3. Either knead by hand or with an electric dough hook for 7 minutes
  4. Leave to rise until doubled in size, about 1-2 hours
  5. Divide into 12 pieces of dough and shape into bagels making a hole in the middle about 2.5cm wide
  6. Leave to rise for another 30 minutes
  7. Bring the 1.5 litres of water to the boil in a large pan and stir in the baking powder
  8. Add the bagels in a couple at a time and boil for 2 minutes
  9. Place on a lined baking sheet
  10. Preheat the oven to 180 oC and bake the bagels for 25-30 minutes

One of my lovely followers on Facebook asked if I had a recipe for a gluten and dairy free naan bread, so Kim Skinner this recipe is for you.

Ingredients

  • 80 ml water, warmed in microwave for 30 seconds
  • 1 teaspoon caster sugar
  • 1 teaspoon dried active yeast
  • 140g gluten free plain flour
  • Pinch of salt
  • 15g dairy free spread
  • 1 tablespoon dairy free natural yoghurt
  • Coriander leaves, optional

  1. In a large bowl stir together the sugar, yeast and water, leave for 5 minutes
  2. Add the flour, salt, dairy free spread and yoghurt
  3. Knead by hand for about 5 minutes
  4. Cover the bowl with cling film and leave to rise for 45 minutes
  5. Knead gently then divide into 2 balls
  6. Drizzle a little olive oil in a frying pan and cook the naan breads for about 3 minutes on each side on a high heat
  7. I served them hot with a little dairy free spread melted on top and sprinkled with coriander leaves

Description

Last week I asked my lovely followers on social media what recipes they would like to see on my website. I’ve got some great suggestions from samosas to tiramisu. A loyal follower, Jason, asked me to do some more bread and pastry recipes so today I baked this basic white loaf.

This loaf can be sliced thinly without falling apart, making it perfect for sandwiches, toasting or dipping in soup! I haven’t tried it yet but I’thinking you could use this recipe to make rolls as well. Look out for more bread recipes coming soon.

  • 235ml dairy free milk, heated for 30 seconds in the microwave
  • 1 teaspoon caster sugar
  • 1 teaspoon salt
  • 2 teaspoons olive oil
  • 1 teaspoon dried active yeast
  • 2 tablespoons lukewarm water
  • 420g gluten free bread flour

Method

  1. Stir together the lukewarm water and yeast
  2. In a large bowl mix together the milk, sugar, salt, olive oil, yeast mix and bread flour
  3. Knead by hand for 10 minutes or with an electric mixer for 5 minutes
  4. Leave in a covered bowl for an hour or until doubled in size
  5. Punch down the dough then place into an oiled 900g loaf tin
  6. Leave to rise for an hour
  7. Preheat the oven to 180 oC
  8. Bake in the oven for 35 minutes
  9. Allow to cool before slicing
