Gluten and Dairy Free Paprika and Oregano Bread

Hello

I’m keeping up my promise to work on more gluten free bread recipes and I’m actually really enjoying it.  This tasted amazing but was a little bit of a funny shape as my cuts on the top were a little deep but I’m still learning and it doesn’t affect the taste.

I served this bread with some spiced sausage creamy tomato pasta for dinner and then toasted the rest the next day with some scrambled egg for breakfast.

Next on my bread making list is some flatbreads and a French stick recipe.

Gluten and Dairy Free Paprika & Oregano Loaf

 

Gluten and Dairy Free Paprika & Oregano Loaf

serves / makes 1 loaf
15 prep time plus rising time
30 mins cooking time

Ingredients

  • 350ml warm water
  • 1/2 teaspoon caster sugar
  • 1 teaspoon salt
  • 7g dried active yeast
  • 425g gluten free bread flour
  • 2 teaspoons smoked paprika
  • 2 teaspoons oregano

Method

  1. Place the water, sugar and yeast in a large bowl, leave for about 10 minutes until frothy
  2. Stir in the salt, flour, paprika and oregano
  3. Knead by hand for about 8 minutes or with an electric dough hook for 5 minutes
  4. Place in the bowl and cover with cling film
  5. Leave to rise until doubled in size, about 1-2 hours
  6. Punch the dough down and knead gently for 1 minute
  7. Shape into an oval loaf, score the top and leave to rise for 30 minutes
  8. Preheat the oven to 220 oC
  9. Bake the loaf for 30 minutes
  10. Allow to cool completely before slicing

Gluten and Dairy Free Sour Dough Bread

This year I want to try and make my own bread more often.  I love making bread but it always seems to fall down my to do list so this year it is going to the top.

I made this sour dough bread over Christmas and I was really pleased with the results after trying out a new bread flour.  I also have a brown loaf with poppy seeds in the oven right at this moment – so if it works out well look for that recipe coming soon.

Sour dough is a great bread for people with allergies as this recipe is free from gluten, dairy, eggs and yeast.  It is a bit of a pest that you have to make the sour dough starter so far in advance but if you plan it well you can always have some lurking around the kitchen.

Gluten and Dairy Free Sour Dough Bread

serves / makes 8
30 mins prep time plus starter made 3 days in advance
45 mins cooking time

Ingredients

For the sour dough starter:

  • 300g gluten free bread flour
  • 300ml water

For the sour dough loaf:

  • 500g gluten free bread flour
  • 300ml warm water
  • 1 teaspoon salt
  • 300g sour dough starter

Method

  1. At least three days in advance of making your bread add the flour and water to an airtight tub
  2. Mix well and seal with the lid, leave at room temperature for at least 3 days
  3. Make the loaf by adding the bread flour, water, salt and sour dough starter to a large bowl
  4. Beat with an electric dough hook or paddle for 5 minutes
  5. Leave to rest for 5 minutes
  6. Shape into a round cob, slash the top and dust with a little gluten free flour
  7. Leave to rest for 30 minutes
  8. Preheat the oven to 220 oC
  9. Bake for 40 minutes
  10. Allow to cool before slicing

Gluten and Dairy Free Chocolate Plaited Buns

Morning everyone

I love sweet bread buns so I was super excited when my vision for a gluten and dairy free chocolate plaited bun actually worked.

I’ve used an enriched sweetened dough and then filled with beautiful dark chocolate.  They are fairly simple to make, I’m not that great at bread making and I manage to pull this recipe together!

I get my knee operation tomorrow but don’t worry I have a few recipes squirrelled away to share with you all while I’m off my feet for a bit.

Gluten and Dairy Free Chocolate Plaited Buns Recipe

Gluten and Dairy Free Chocolate Plaited Buns

serves / makes 8 buns

25 mins cooking time

Ingredients

  • 7g dried active yeast
  • 230ml water, heated in the microwave for 30 seconds
  • 3 tablespoons honey
  • 40g dairy free spread, melted
  • 1 teaspoon salt
  • 1 egg, beaten
  • 450g gluten free white bread flour
  • 200g dairy free chocolate, melted

 

Method

 

  1. Place all the ingredients, except the chocolate, in a large bowl and mix until it forms a smooth dough
  2. Knead the dough by hand for about 8 minutes or with a dough hook on an electric mixer for 5 minutes
  3. Cover the dough and leave to rise in a warm place for about 40 minutes
  4. Knead the dough for one minute
  5. Return to the bowl, cover and leave to rise for another 40 minutes
  6. Knead the dough for one minute
  7. Divide into 8 equal portions
  8. Roll out each portion into a rectangle, it should be about 1/2 cm thick
  9. Spread each rectangle with melted chocolate then roll up from the short side of the rectangle
  10. Cut each rolled up piece of dough in half lengthways so the chocolate is exposed along the whole rope
  11. Plait the two pieces of dough together
  12. Pinch each of the ends together to close the buns
  13. Place the eight buns on a lined baking sheet
  14. Leave to rise for 20 minutes
  15. Preheat the oven to 180 oC
  16. Brush the buns with some egg wash
  17. Bake in the centre of the oven for 25 minutes

Gluten, Dairy and Egg Free Currant Buns

Morning Everyone

Hope you are all having a fun weekend and have a great Sunday planned.  I’m hoping for a relaxing Sunday after a busy few days decorating a bedroom.

I made these currant buns about a month ago, I was after something similar to a fruit bread but in a little bun.  They are slightly crisp on the outside and soft and fluffy on the inside.  The buns taste perfect while still slightly warm and spread with some strawberry jam.  As well as being gluten and dairy free they are also egg free making them suitable for vegans.

A super quick bread recipe free from gluten, dairy and yeast.

Tastes amazing fresh from the oven, still a little warm with some raspberry jam.

Ingredients

  • 420ml dairy free milk
  • 5 teaspoons lemon juice
  • 1 egg, beaten
  • 520g gluten free bread flour
  • 2 tablespoons caster sugar
  • 2 teaspoons xanthan gum
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 65g dairy free spread

Method

  1. Preheat the oven to 210 oC
  2. Lightly grease a 9″ cake tin
  3. Stir the lemon juice into the dairy free milk and set aside for 5 minutes, this makes dairy free buttermilk
  4. In a large bowl add the flour, sugar, xanthan gum, baking soda and salt, stir until well combined
  5. Rub in the dairy free spread until it resembles breadcrumbs
  6. Pour in the buttermilk and beaten egg
  7. Mix until stiff dough forms
  8. Knead for 1 minute
  9. Shape into a ball and place in the baking tin
  10. Bake for 55 minutes

Description

There is nothing better than freshly baked bread but sadly the reality of the situation is that I rarely have time to make it from scratch. All that time waiting about on yeast to active and the dough to double in size, I know I could use a bread maker but for some reason I always seem to get a better bread making it by hand.

This recipe came from me experimenting with non-yeasted bread, I’ve used plain flour and baking powder to get the rise which means it can be baked immediately – so if you are short on time or can’t have yeast then this recipe is for you!.

Ingredients

  • 315g gluten free plain flour
  • 2 teaspoons baking powder
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • good pinch of black pepper
  • 1 teaspoon mixed herbs
  • 100g dairy free cheese, grated
  • 1 medium onion, finely diced
  • 2 eggs
  • 185ml dairy free milk
  • 55g dairy free spread, melted

  1. Preheat the oven to 180 oC
  2. Grease and line a loaf tin
  3. Place the diced onion and a little olive oil in a shallow pan over a medium heat
  4. Gently saute the onion until soft, about 5 minutes
  5. Place the flour, baking powder, xanthan gum, salt, pepper and mixed herbs in a large bowl
  6. Stir in the onion and grated cheese
  7. Beat together the eggs, milk and dairy free spread
  8. Mix into the flour until you have a soft dough
  9. Spoon into the loaf tin
  10. Bake in the centre of the oven for 45 minutes
  11. Remove from the tin and allow to cool completely before slicing
