The Great British Bake Off Week 3 – Bread Week

Hello

This time it is bread week on The Great British Bake Off so I thought it would be good timing to share my latest gluten and dairy free bread recipe with you.

Tiger bread gets its name from the mottled crust that forms as the dough bakes in the oven.  A special paste is spread on the dough which gives the bread its distinct look and flavour.

Gluten and Dairy Free Tiger Bread

 

Gluten and Dairy Free Tiger Bread

serves / makes 8
30 mins prep time plus starter made 3 days in advance
45 mins cooking time

Ingredients

For the sour dough starter:

  • 300g gluten free bread flour
  • 300ml water

For the sour dough loaf:

  • 500g gluten free bread flour
  • 300ml warm water
  • 1 teaspoon salt
  • 300g sour dough starter

For the topping:

  • 1 teaspoon easy bake yeast
  • 1 teaspoon caster sugar
  • 2 teaspoons olive oil
  • pinch of salt
  • 75g polenta or ground rice
  • 6 tablespoons warm water

Method

  1. At least three days in advance of making your bread add the flour and water to an airtight tub
  2. Mix well and seal with the lid, leave at room temperature for at least 3 days
  3. Make the loaf by adding the bread flour, water, salt and sour dough starter to a large bowl
  4. Beat with an electric dough hook or paddle for 5 minutes
  5. Leave to rest for 5 minutes
  6. Shape into a round cob, slash the top and dust with a little gluten free flour
  7. Leave to rest for 30 minutes
  8. Mix together the ingredients for the topping and spread on the loaf
  9. Preheat the oven to 220 oC
  10. Bake for 40 minutes
  11. Allow to cool before slicing

Gluten and Dairy Free Poppyseed Bloomer

serves / makes 8
30 mins prep time plus starter made 3 days in advance
45 mins cooking time

Ingredients

For the sour dough starter:

  • 300g gluten free bread flour
  • 300ml water

For the sour dough loaf:

  • 500g gluten free bread flour
  • 1 teaspoons smoked paprikka
  • 1 teaspoon chilli powder
  • 300ml warm water
  • 1 teaspoon salt
  • 300g sour dough starter
  • 1 tablespoon poppyseeds

Method

  1. At least three days in advance of making your bread add the flour and water to an airtight tub
  2. Mix well and seal with the lid, leave at room temperature for at least 3 days
  3. Make the loaf by adding the bread flour, paprika, chilli, water, salt and sour dough starter to a large bowl

  8. Sprinkle the poppyseeds on top of the loaf
  9. Preheat the oven to 220 oC
  10. Bake for 40 minutes
  11. Allow to cool before slicing

Gluten and Dairy Free Poppyseed Brown Loaf

Ingredients

  • 315g gluten free brown bread flour, I used Orgran
  • 2 teaspoons baking powder
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • good pinch of black pepper
  • 2 eggs
  • 185ml dairy free milk
  • 55g dairy free spread, melted
  • 1 tablespoon poppy seeds

Method

  1. Preheat the oven to 180 oC
  2. Place the flour, baking powder, xanthan gum, salt and pepper in a large bowl
  3. Beat together the eggs, milk and dairy free spread
  4. Mix into the flour until you have a soft dough
  5. Place on a sheet of grease proof paper and hand shape into an oval loaf
  6. Make three slits across the top and sprinkle on the poppy seeds
  7. Bake in the centre of the oven for 45 minutes
  8. Remove from the oven and allow to cool completely before slicing

 

Gluten and Dairy Free Basil & Sea Salt Focaccia

Hello

I’m still working on creating a series of gluten and dairy free bread recipes and the latest addition to that is basil and sea salt focaccia.  The outside has that lovely crisp almost chewiness (not sure if that sounds good) of focaccia and the inside is lovely and fluffy.

This bread goes perfect with pasta or risotto.  I actually saw a picture of some lovely little individual round focaccias with sun-dried tomatoes, I’ll need to try that out sometime.

Gluten and Dairy Free French Baguette

Sorry this post is slightly delayed I meant to post it yesterday but it never got to the top of my to do list.   I went back to work on Thursday after my elbow operation, it was great to be back to some normality.  I’m a chartered accountant but a lot of my job is people focused so I really enjoy it.  Can’t wait til next Tuesday when I get my stitches out, always makes you more comfortable after any op.

Enough of the medical updates and onto the food!  Hands up if you miss proper crusty bread?  I have been working over the last few months on some gluten and dairy free bread recipes and my latest mission as been crusty French baguettes.

Gluten and Dairy Free French Baguette

Gluten and Dairy Free Mexican Cheese Flatbreads

Serves 6

Ingredients

  • 250g gluten free plain flour
  • 1/2 teaspoon salt
  • 110ml warm water
  • 100ml olive oil
  • 1 teaspoon mild chilli powder
  • 1 teaspoon coriander leaves
  • 2 tablespoons dairy free cheese, grated

Method

  1. Place the flour, salt, water and olive oil in a large bowl
  2. Stir until it forms a ball
  3. Knead for 10 minutes by hand
  4. Knead in the chilli powder, coriander leaves and dairy free cheese
  5. Divide into 6 balls
  6. Roll out into flat discs about 3mm thick and dust with a little flour on each side
  7. Heat a frying pan on a medium heat
  8. Cook for 3-4 minutes on each side
