Gluten and Dairy Free Honey Sriracha Beef

Hello everyone

I’m a bit behind with the website this week.  I usually have all my posts scheduled and ready to go at the weekend.  I had a friend visiting from London on Saturday and Sunday was taken up doing other bits and pieces so I never got round to it.

I’m off work tomorrow so fingers crossed I’ll have a bit of time to catch up.

Tonight’s recipe is for this beautiful honey sriracha beef – perfectly sizzled and served with overnight roasted vegetables and fries.   I’m not going to write a long post as I have a gluten and dairy free banana and peanut butter cupcake waiting with my name on it.

Gluten and Dairy Free Honey Sriracha Beef

Serves 2

Ingredients

  • 500g beef steak, cut into strips
  • 4 tablespoons honey
  • 2 tablespoons sriracha sauce
  • 1 tablespoon rice vinegar
  • salt and pepper, for seasoning

Directions

  1. Whisk together the honey, sriracha sauce and rice vinegar
  2. Season with salt and pepper
  3. Cover the beef strips
  4. Marinade in the fridge for a couple of hours
  5. Heat a grill pan on a medium to high heat
  6. Sear the beef for a couple of minutes on each side
  7. Serve with oven roasted vegetables and fries

Gluten and Dairy Free Crispy Sweet Chilli Beef

I’m very lucky that both my local Chinese and Indian takeaway make a couple of dishes that are gluten and dairy free and safe for me to enjoy as a little treat.  I do miss crispy sweet chilli beef though as that is not one of the dishes I can order.  I thought I would have a little go at making this dish at home – so if you are craving Chinese give this recipe a try.

Gluten and Dairy Free Crispy Sweet Chilli Beef

Serves 2

Ingredients

  • 300g beef strips
  • 1 egg
  • 1-2 tablespoons gluten free flour
  • salt and pepper for seasoning
  • 2 tablespoons sweet chilli sauce
  • 2 teaspoons tamari
  • 70ml water
  • 2 tablespoons lemon juice
  • 2 teaspoons cornflour
  • 2 tablespoons honey

Directions

  1. Whisk the egg in a bowl
  2. In another bowl stir some salt and pepper into the plain flour
  3. Heat some oil in a wok – a good few centimeters deep
  4. Dip the beef in the egg then coat in the flour
  5. Fry the beef in batches for about 2-4 minutes, set aside
  6. Drain away the majority of the oil from the wok
  7. Whisk together the sweet chilli sauce, tamarin, water, lemon juice, cornflour and honey
  8. Add into the wok and bring to the boil
  9. Cook for a couple of minutes until it thickens
  10. Add in the beef and stir until it is well coated in the sauce
  11. Serve with the rice

 

 

 

Gluten and Dairy Free Garlic and Parsley Steak

Description

A simple but tasty dinner idea using ingredients that are naturally gluten and dairy free. You can change the seasoning on the steaks to anything you like for a little variety!

Ingredients

  • 2 lean steaks
  • 2 cloves minced garlic
  • 2 tablespoons olive oil
  • handful of fresh parsley
  • salt and pepper for seasoning

  1. Season both sides of the steaks with salt and pepper
  2. In a small bowl mix together the minced garlic, parsley and olive oil
  3. Pour over the steaks, if you have time allow to marinade for a couple of hours
  4. Heat up a grill or frying pan on a medium heat
  5. Add the steaks and cook for about 3 minutes on each side (for medium)
  6. Remove from the heat and allow to sit for about 5-7 minutes before serving
  7. Serve with a selection of chargrilled vegetables and roast potatoes

Gluten and Dairy Free Beef Burgers

Ingredients

For the burgers:

  • 500g Steak Mince
  • 1/2 tsp Garlic Paste
  • 1/2 tsp Cumin
  • 1 tsp Oregano
  • 1/2 Onion
  • Salt and pepper, for seasoning
  • 4 gluten free burger buns

Method

 

  1. Add all the ingredients to a mixing bowl
  2. Season with salt and pepper and mix well
  3. Shape into four circular burger shapes
  4. Grill for approximately 15 minutes, flipping half way through cooking
  5. Place the burgers inside the buns and serve with the homemade chips

Gluten and Dairy Free Beef Ragu

Description

Beef ragu is similar but different to bolognese. Ragu doesn’t have the chopped tomato added and has a much richer flavour. This recipe does take a little longer than my usual recipes to make but the vast majority the cooking time is just leaving it to simmer in the pot.

Ingredients

  • 50g smoked bacon or pancetta, finely chopped
  • 1 onion, finely diced
  • 2 garlic cloves, minced
  • 1 teaspoon basil
  • 400g lean steak mince
  • 250ml red wine
  • 125ml beef stock
  • 2 tablespoons tomato puree
  • 200g gluten free pasta, cooked per instructions on the packet
  • salt and pepper for seasoning

Method

  1. Place a pan on a medium heat and add the bacon
  2. Cook for a couple of minutes then add the onion and garlic
  3. Cook until the onion softens, about 3-5 minutes
  4. Add the mince and cook until browned, about 5 minutes
  5. Stir in the red wine, tomato puree, basil and beef stock
  6. Bring to the boil, cover with a lid and simmer for 40 minutes
  7. Remove the lid and simmer for about another 40 minutes until the sauce has thickened
  8. Serve with the cooked pasta, I topped mine with a sprinkle of grated dairy free cheese

Gluten & Dairy Free Beef Chilli with Rice, Flatbread & Yoghurt Dip

Description

This beef chilli is great made up in big batches and frozen for a quick dinner at a future date. Feel free to add kidney beans, I left them out as I’m not a huge fan.

Ingredients

For the beef chilli:

  • 1 teaspoon chilli paste
  • 3 teaspoons ground cumin
  • 2 teaspoons oregano
  • 1 teaspoon cinnamon
  • 1 teaspoon thyme
  • 1 teaspoon ground coriander
  • 2 garlic cloves, minced
  • 500g braising beef chunks
  • 2 onions, diced
  • 800g chopped tomatoes
  • 430ml beef stock
  • 200g brown rice
  • 100g dairy free natural yoghurt

For the flatbread:

  • 225g gluten free wholemeal bread flour
  • 1 teaspoon xanthan gum
  • 7g dried active yeast
  • 1/2 teaspoon salt
  • 150ml water, warmed in the microwave for 30 seconds
  • 2 tablespoons olive oil

Method

For the Beef Chilli:

  • In a large pan add the beef, chilli paste, cumin, oregano, cinnamon, thyme, coriander, garlic and a drizzle of olive oil
  • Brown the beef for about 5 minutes
  • Add the onion and cook for a further five minutes
  • Pour in the chopped tomatoes and beef stock
  • Cover the pan and cook on a low heat for an hour
  • Remove the lid and turn up the heat until it is simmering gently
  • Cook until the sauce has reduced and is thick, about 40 minutes
  • Serve with boiled brown rice, natural yoghurt with a sprinkle of paprika and a wholemeal flatbread (directions below)

Chilli

For the Flatbread:

  • Add all the ingredients into a bowl and mix to form a ball
  • Either beat with an electric dough hook for 5 minutes or knead by hand on a floured surface
  • Leave in a warm place to rise for an hour
  • Knead for another minute
  • Divide the dough into six pieces
  • Roll out until about 6″ long and 5mm thick
  • Leave to rise for about 20 minutes
  • Heat up the oven to 230 oC
  • Bake the flatbreads for about 5 minutes
