Gluten and Dairy Free Honey Banana Loaf

Hello

I buy bananas most weeks with the intention of using them in smoothies or just for eating.   Unfortunately I usually forget about them until they are very ripe and then I use them for baking!

This time I decided to pair it up with honey and create a lovely little loaf which is perfect with a large cup of tea or coffee.

The loaf tastes great on its own but can be served with some jam, cashew nut butter or like the photo above with a drizzle of extra honey and some banana chips.

Gluten and Dairy Free Honey Banana Loaf

 

Serves 8

Ingredients

  • 70g dairy free spread
  • 70g caster sugar
  • 1 egg
  • 220g gluten free self raising flour
  • 3 medium bananas, mashed
  • 2 tablespoons honey

Method

  1. Preheat the oven to 180 oC
  2. Grease and line a loaf tin
  3. Whisk together the dairy free spread and caster sugar until light and fluffy
  4. Beat in the egg
  5. Stir in the flour, mashed bananas and honey
  6. Bake for 45 minutes
  7. Remove from the loaf tin and allow to cool before slicing

Gluten and Dairy Free Spiced Sultana & Banana Bundt Cake

Serves 8-10

Ingredients

  • 150g dairy free spread
  • 170g caster sugar
  • 3 eggs
  • 4 medium sized bananas, mashed
  • 100ml dairy free natural yoghurt
  • 3540g gluten free self raising flour
  • 1 teaspoon ground mixed spice
  • 85g sultanas

Directions

  1. Preheat the oven to 180 oC
  2. Grease a 9″ bundt tin or round cake tin
  3. Beat together the dairy free spread and caster sugar
  4. Whisk in the eggs one at a time
  5. Stir in the mashed bananas, flour, mixed spice and sultanas
  6. Pour into the cake tin
  7. Bake in the oven for 50 minutes
  8. Remove from the oven and cake tin
  9. Allow to cool completely before dusting with icing sugar

Gluten and Dairy Free Banana Choc Chip Cheesecake

Hello

As Holland and Barrett are selling the Scheese dairy free soft cheese on buy one get one half price I needed no more encouragement to make a gluten and dairy free cheesecake.

I have a large number of bananas at the moment as a lovely friend sent me a get well soon fruit hamper so decided to make a banana chocolate chip cheesecake.

I think next time I’ll make a raspberry or mango cheesecake – let me know if there is any flavour of cheesecake you would like a recipe for.

Gluten and Dairy Free Banana Choc Chip Cheesecake

Gluten and Dairy Free Banana Choc Chip Cheesecake

serves 8

Ingredients

For the base:

  • 100g dairy free spread, melted
  • 200g gluten free digestive biscuits

For the filling:

  • 1 large banana
  • 450g dairy free cream cheese
  • 200g caster sugar
  • 1.5 tablespoons gluten free plain flour
  • 2 eggs, separated
  • 80g dairy free chocolate chips

For the topping:

  • 1 banana, sliced
  • handful of cashew nuts
  • dairy free chocolate bar, I used Moo banana bar
  • dairy free chocolate sauce, I used ChocShot

Method

  1. Preheat the oven to 150 oC
  2. Grease a 9″ round springform tin
  3. Crush the biscuits into fine crumbs and pour in the melted butter
  4. Press into the base of the tin
  5. Bake for 15 minutes
  6. Stir together the mashed banana, cream cheese, caster sugar, flour and egg yolks
  7. In a separate bowl whisk the egg whites until they form stiff peaks
  8. Carefully stir the egg whites and chocolate chips into the banana mix
  9. Pour over the biscuit base
  10. Bake for 50 minutes
  11. Remove from the oven and allow to cool
  12. Chill in the fridge for a couple of hours or overnight, if possible
  13. Remove from the cake tin and decorate with the banana, nuts and chocolate

Gluten and Dairy Free Spiced Chocolate Banana Cake

I thought it was time I shared a new cake recipe – this one is for my spiced chocolate banana cake.  I made this a couple of weeks before Christmas – it is kind of like a banana bread with a hint of chocolate and spices all topped with some sweet buttercream.

I’ve also just baked some orange and poppyseed drizzle muffins so I’ll share the recipe for them soon if they taste good.

Gluten and Dairy Free Walnut Choc Chip Banana Bread

I love making banana bread, the addition of the banana instantly gives the cake a lovely moist texture and great flavour. I’ve added in some chopped walnuts and dairy free chocolate chips to make this banana bread a little bit more special.

Ingredients

  • 110g dairy free spread
  • 110g caster sugar
  • 2 eggs
  • 3 ripe bananas
  • 125g gluten free self-raising flour
  • 75g ground rice or ground almonds
  • 1 teaspoon baking powder
  • 1 teaspoon xanthan gum
  • 150g dairy free chocolate chips
  • 100g chopped walnuts

Method

  1. Preheat the oven to 180 oC
  2. Grease and line a 900g loaf tin
  3. Cream the dairy free spread and sugar together until light and fluffy
  4. Add the eggs, beating well between each addition
  5. Mash the bananas and add to the mixing bowl
  6. Add in the dry ingredients and mix well
  7. Stir through the chopped walnuts and chocolate chips
  8. Pour the cake mix into the loaf tin
  9. Bake in the oven for 70 minutes
  10. Remove from the oven and allow to cool before slicing

Gluten and Dairy Free Banana Cinnamon Muffins

Description

I bake with bananas a lot so sorry if you are not a fan of them and are thinking not another banana recipe! I think they add a great flavour and a lovely moist light texture to cake, it also pairs naturally with cinnamon – another of my favourites.

These little muffins can be made pretty easily and eaten from the oven for a treat breakfast.

Ingredients

For the muffins:

  • 50g gluten free porridge oats
  • 1 teaspoon ground cinnamon
  • 200ml dairy free milk
  • 3 bananas, mashed
  • 125g light brown sugar
  • 3 tablespoons olive or vegetable oil
  • 1 egg white
  • 250g gluten free plain flour
  • 1 teaspoon xanthan gum
  • 2 teaspoons baking powder

For the topping:

  • 2 teaspoons gluten free oats
  • 1 teaspoon ground cinnamon
  • 2 teaspoons caster sugar

Method

  1. Preheat the oven to 180 oC
  2. Blend the oats to make a coarse flour
  3. Pour the milk into the oat flour and leave for 5 minutes
  4. In a large bowl mix together the cinnamon, flour, xanthan gum and baking powder
  5. In another bowl beat together the sugar, oil, egg white and mashed banana
  6. Add this and the oat milk mixture to the dry ingredients
  7. Mix until well combined
  8. Grease or line a 12 hole muffin
  9. Divide the mixture between the 12 muffin cases
  10. Make the topping by mixing together the oats, cinnamon and sugar
  11. Sprinkle on top of the muffins
  12. Bake in the oven for 25 minutes

Ingredients

  • 4 tablespoons pumpkin seeds, roughly chopped
  • 2 tablespoons chia seeds
  • 2 medium sized bananas, mashed
  • 100g dairy free spread, melted
  • 3 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • 180g gluten free oats
  • 100g sultanas

Method

  1. Line an 8″ square baking tin with tinfoil
  2. Preheat the oven to 180 oC
  3. Mix together the pumpkin seeds, chia seeds, mashed banana, melted dairy free spread, maple syrup, ground cinnamon, oats and sultanas until well combined
  4. Pour into the cake tin and press down firmly
  5. Bake int he oven for 30 minutes
  6. Remove from the oven and allow to cool in the tin
  7. Remove from the tin and cut into 9 bars
