Gluten and Dairy Free Cherry & Cinnamon Banana Bread

Ingredients

  • 260g gluten free self raising flour
  • 115g dairy free spread
  • 170g caster sugar
  • 2 eggs
  • 2 teaspoons ground cinnamon
  • 2 medium ripe bananas, mashed
  • 150g cherries, stones removed

Directions

  1. Preheat the oven to 180 oC
  2. Grease and line a loaf tin
  3. Beat together the dairy free spread and caster sugar until light and fluffy
  4. Beat in the eggs one at a time
  5. Stir in the flour, cinnamon and mashed banana
  6. Coat the cherries in a little flour and then gently stir into the cake
  7. Pour into the loaf tin
  8. Bake for 45 minutes

Gluten, Dairy & Egg Free Chocolate Cinnamon Banana Pudding

Serves 4

Ingredients

  • 1 banana
  • 340g soft silken tofu
  • 30g icing sugar
  • 5 tablespoons cocoa powder
  • 3 tablespoons dairy free milk
  • 2 teaspoons ground cinnamon

Method

  1. Place the banana, tofu, icing sugar, cocoa powder, milk and cinnamon in a blender
  2. Blitz until creamy and smooth
  3. Divide between 4 serving dishes and store in the fridge until you are ready to use

Gluten and Dairy Free Banana Muffins

Hello everyone

I fancied freshly baked muffins for breakfast last week – luckily this recipe can be on the table in 30 minutes.  Lovely fresh, fluffy muffins with banana and a little pinch of cinnamon and the kitchen was left smelling amazing while I ate breakfast.

These muffins also freeze well and taste great warmed in the microwave for a few seconds.

Serves 6

Ingredients

  • 190g gluten free self raising flour
  • 3 medium sized banana, mashed
  • 100g caster sugar
  • 1 egg
  • 75g dairy free spread, melted
  • 1 teaspoon ground cinnamon, optional

Method

  1. Preheat the oven to 180 oC
  2. In a large bowl mix together the mashed banana, melted dairy free spread and egg
  3. Stir in the caster sugar, flour and cinnamon
  4. Divide between 6  muffin cases
  5. Bake in the oven for 25 minutes
  6. Allow to cool before serving

Gluten and Dairy Free Banana & Raspberry Breakfast Pudding

Serves 1

Ingredients

  • 2 tablespoons frozen raspberries
  • 1 frozen banana
  • 50ml dairy free milk
  • sprinkle of gluten free granola

Method

  1. Place the raspberries, banana and dairy free milk in the blender
  2. Blitz until smooth
  3. Pour into a bowl
  4. Top with gluten free granola

 

Gluten and Dairy Free Frosted Banana Bread

Ingredients

For the banana cake:

  • 115g dairy free spread
  • 115g caster sugar
  • 2 eggs
  • 3 ripe bananas
  • 130g gluten free self-raising flour
  • 80g ground rice
  • 1 teaspoon baking powder

For the frosting:

  • 125g dairy free spread
  • 230g icing sugar
  • 20g cocoa powder

To decorate:

  • dairy free chocolate buttons
  • banana chips
  • 1 tablespoon peanut butter, optional

Method

  1. Preheat the oven to 180 oC
  2. Grease and line a 6″ round baking tin
  3. Cream the dairy free spread and sugar together until light and fluffy
  4. Add the eggs, beating well between each addition
  5. Mash the bananas and add to the mixing bowl
  6. Add in the dry ingredients and mix well
  7. Spoon the cake mix into the baking tin
  8. Bake in the oven for 1 hour and 10 minutes
  9. Remove from the tin and leave to cool on a rack before frosting
  10. Make the frosting by beating together the dairy free spread, cocoa powder and icing sugar
  11. Spread on top of the cake
  12. Decorate with the banana chips and chocolate buttons
  13. Soften the peanut butter in the microwave for 20 seconds and drizzle on top of the cake

Gluten and Dairy Free Honey Banana Loaf

Hello

I buy bananas most weeks with the intention of using them in smoothies or just for eating.   Unfortunately I usually forget about them until they are very ripe and then I use them for baking!

This time I decided to pair it up with honey and create a lovely little loaf which is perfect with a large cup of tea or coffee.

The loaf tastes great on its own but can be served with some jam, cashew nut butter or like the photo above with a drizzle of extra honey and some banana chips.

  • 70g caster sugar
  • 1 egg
  • 220g gluten free self raising flour
  • 3 medium bananas, mashed
  • 2 tablespoons honey

Method

  1. Preheat the oven to 180 oC
  2. Grease and line a loaf tin
  3. Whisk together the dairy free spread and caster sugar until light and fluffy
  4. Beat in the egg
  5. Stir in the flour, mashed bananas and honey
  6. Bake for 45 minutes
  7. Remove from the loaf tin and allow to cool before slicing
