Gluten and Dairy Free Sticky Spiced Sultana Bars

Description

This cake is kind of like a brownie without chocolate, if that even makes sense. It is the shape and consistency of a sticky brownie but is flavoured with sultanas and spices instead of chocolate.

Ingredients

  • 110g gluten free plain flour
  • 1 teaspoon xanthan gum
  • 1 teaspoon baking powder
  • 2 teaspoon cinnamon
  • 1/2 teaspoon grated nutmeg
  • 1 teaspoon ginger
  • 225g sultanas
  • 115g dairy free spread
  • 100g sugar
  • 2 eggs
  • 120g treacle
  • 45g golden syrup

Method

  1. Preheat the oven to 180 oC and line a 12″ by 8″ baking tin with tinfoil
  2. Beat together the caster sugar and dairy free spread until light and fluffy
  3. Mix in the eggs one at a time
  4. Stir in the treacle and golden syrup
  5. Add the flour, xanthan gum, baking powder, cinnamon, nutmeg, ginger
  6. Stir through the sultanas and pour into the baking tin
  7. Bake in the centre of the oven for 25 minutes
  8. Allow to cool for ten minutes before removing from the baking tin
  9. Once completely cooled cut into 8 squares and dust with icing sugar

I was happy to receive a request for a gluten and dairy free recipe using white chocolate. I’ve come up with this muffin recipe with freeze dried strawberries and white chocolate chips. You could substitute the strawberries with raspberries and use any kind of chocolate.

  3. Beat together the dairy free spread and caster sugar until light and fluffy
  4. Stir in the egg yolks and beat until well combined
  5. Stir in the flour, xanthan gum and cinnamon
  6. On a separate bowl beat the egg whites until stiff peaks form
  7. Gently fold the egg whites into the cake batter
  8. Pour the mixture into the cake tin and decorate the top with the halved strawberries
  9. Bake for 40 minutes
  10. Remove from the tin and allow to cool
  11. Cut into squares and dust with a little icing sugar

Description

I’ve never really used the microwave for baking so thought I would give it a try. Everyone is so busy nowadays it can be difficult to find the time to make dinner from scratch never mind dessert.

This dessert is gluten and dairy free and is super quick to make as you can mix all the ingredients in the dish you cook it in and it only takes 8 minutes in the microwave. The result is a moist, chocolaty banana pudding.

Ingredients

  • 100g dairy free spread
  • 2 ripe bananas
  • 60g brown sugar
  • 30g dairy free cocoa powder
  • 70g gluten free plain flour
  • 70g dairy free dark chocolate chips
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 teaspoons gluten free baking powder
  • 1 teaspoon xanthan gum
  • 2 eggs

  1. Place the butter in a microwavable 1 litre casserole dish and microwave for 45 seconds
  2. Mash one and a half of the bananas into the butter in the casserole dish
  3. Stir in the brown sugar, cocoa powder, plain flour, chocolate chips, cinnamon, nutmeg, baking powder, xanthan gum and the eggs
  4. Slice the remaining half banana and place on the top of the cake batter
  5. Sprinkle with a little extra nutmeg and cinnamon
  6. Cook in the microwave for 8 minutes

This is a really simple recipe for some spiced carrot buns. I love my cakes but sometimes it is nice to just have a plain bun rather than something covered in icing. This muffin is right up my street as I absolutely love the taste and smell of cinnamon. These muffins smell amazing as you start by cooking the raisins, apple and spices together in a pan filling the kitchen with a lovely aroma. The muffins themselves are very moist from the juicy raisins and grated apples. Perfect anytime of the day.

  • 150g raisins
  • 280ml water, boiled
  • 115g dairy free spread
  • 200g caster sugar
  • 2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1 medium apple, peeled and grated
  • 240g gluten free self raising flour
  • 1 teaspoon xanthan gum
  • 1 egg

Method

  1. In a medium sized saucepan, add the raisins, boiling water, dairy free spread, cater sugar, cinnamon, nutmeg, ground ginger and grated apple.
  2. Bring to the boil and allow to simmer for 12 minutes, remove from the heat and allow to cool
  3. Preheat the oven to 190 oC
  4. Bet the egg into the cooled mixture and stir in the flour and xanthan gum
  5. Spoon into muffin tins and bake in the centre of the oven for 25 minutes
  6. Allow to cool for 5 minutes then remove from the muffin tins

For the cake:

  • 115g soft light brown sugar
  • 275g gluten free self-raising flour
  • 1 teaspoon xanthan gum
  • 3 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground cinnamon
  • 60ml sunflower or olive oil
  • 60ml honey
  • 2 eggs
  • 60ml fresh orange juice
  • 3 bananas, mashed
  • 115g sultanas

For the frosting:

  • 250g icing sugar
  • 125g dairy free spread

Method

  1. Preheat the oven to 180 oC and line an 8″ baking tin
  2. Beat together the eggs and oil
  3. Stir in the honey and orange juice
  4. Add the sugar, flour, xanthan gum, ginger, nutmeg and cinnamon
  5. Mix well to combine
  6. Stir in the mashed bananas and sultanas
  7. Pour into the cake tin and bake in the centre of the oven for 45 minutes
  8. Remove from the oven and allow to cool completely
  9. Make the frosting by beating together the icing sugar and dairy free spread
  10. Spread on the cake and decorate

Gluten and Dairy Free Self Saucing Chocolate Pudding

This pudding is one of these recipes that from the ingredients you can’t imagine what the final result will be. Pouring all that hot water onto raw cake mix just doesn’t seem right but trust me you get a great result every time.

  • 150g gluten free self-raising flour
  • 150g caster sugar
  • 1 teaspoon xanthan gum
  • 2 tablespoons dairy free cocoa powder
  • 125ml dairy free milk
  • 30g dairy free spread, melted

For the sauce:

  • 425ml boiling water
  • 125g brown sugar
  • 4 tablespoons dairy free cocoa powder

Method

  1. Preheat the oven to 180 oC
  2. Grease a 2 litre casserole dish
  3. Stir together the flour, caster sugar, xanthan gum, cocoa powder, dairy free milk and melted dairy free spread until well combined
  4. Pour the mixture into the baking dish
  5. Stir together the brown sugar and the 4 tablespoons of cocoa powder
  6. Sprinkle over the cake batter
  7. Pour the hot water gently into the casserole dish
  8. Place in the centre of the oven and bake for 50 minutes
  9. Serve with dairy free ice-cream

Gluten and Dairy Free Singing Hinny

serves / makes 4

Ingredients

  • 120g gluten free plain flour
  • 1 tablespoon caster sugar
  • pinch of salt
  • 1/2 teaspoon gluten free baking powder
  • 50g dairy free spread
  • 30g sultanas
  • 5 tablespoons dairy free milk
  • 1 tablespoon lemon juice

Method

  1. Place the flour, salt, sugar and baking powder into a large bowl
  2. Rub in the dairy free spread until it resembles breadcrumbs
  3. Stir in the sultanas
  4. Mix together the milk and lemon juice
  5. Stir into the flour mix until it forms a soft dough
  6. Roll out into a circle about a couple of centimetres thick
  7. Slice into quarters
  8. Heat a frying pan over a medium to hot heat
  9. Cook the singing hinnys for a few minutes on each side until they start to brown slightly
  10. Serve immediately with dairy free spread, jam or honey
