Gluten and Dairy Free Apple Fritters

Hello

I made these last Sunday for a little afternoon snack – perfect with a cup of coffee especially as the cold weather is back!  These apple fritters are really quick to make – just whisk together a batter similar to making pancakes and stir in the chopped apple.

I heated the leftover fritters in the oven next day and had them as a treat breakfast with some dairy free yoghurt and strawberries.

Gluten and Dairy Free Apple Fritters

Makes 8 fritters

Ingredients

  • 1 apple, peeled, cored and cut into small cubes
  • 2 teaspoons cinnamon
  • 120g gluten free plain flour
  • 40g caster sugar
  • 1 teaspoon baking powder
  • 90ml dairy free milk
  • 1 egg
  • 25g dairy free spread, melted

Directions

  1. Toss the apple cubes in one teaspoon of ground cinnamon and set aside
  2. Whisk together the flour, caster sugar, baking  powder, remaining teaspoon of cinnamon, egg, milk and melted dairy free spread
  3. Stir through the cinnamon apples
  4. Heat a 1-2 inches of oil in a saucepan over a medium heat
  5. Drop in a little batter, if it sizzles and then rises to the top the oil is at temperature
  6. Drop heaped tablespoons of the batter into the oil a couple at a time
  7. Cook for 2 minutes then flip the fritters and cook for another 2 minutes
  8. Remove from the pan with a slotted spoon and dust with icing sugar

Gluten and Dairy Free Apple Pie Blondies

Stuck at home because of the snow?  Try baking these gluten and dairy free apple pie blondies as a little treat.  These blondies have lovely warming spices with soft chunks of caramelised apple mixed in.  The smell is amazing when these are cooking in the oven – they also taste great heated slightly with a scoop of dairy free ice cream.

Hope everyone has stayed safe during this snow storm.  While not as bad as some places we were on a red snow warning for a couple of days and the snow is about knee deep in the back garden.  Fingers crossed everything gets back to normal business soon.

Gluten and Dairy Free Apple Pie Blondies

Gluten and Dairy Free Apple Pie Blondies

Serves 12

Ingredients

For the apples:

  • 1 apple, peeled and cut into 1/4” cubes
  • 1 tablespoon brown sugar
  • 15g dairy free spread

For the blondies: 

  • 115g dairy free spread, melted
  • 165g brown sugar
  • 1 egg
  • 2 teaspoons mixed spice
  • 130g gluten free plain flour
  • 1/2 teaspoon baking powder

Directions

  1. Preheat the oven to 180 oC
  2. Line an 8” by 8” cake tin with baking paper
  3. Place the chopped apple, brown sugar and dairy free spread in a small saucepan and cook over a medium heat for 5 minutes or until softened
  4. Put the melted dairy free spread, brown sugar and egg in a large bowl
  5. Whisk together then stir in the mixed spice, flour and baking powder
  6.  Gently fold in the cooked apple mixture
  7. Pour into the cake tin and bake in the oven for 35 minutes
  8. Allow to cool completely in the tin before cutting into squares

Gluten, Dairy & Egg Free Spiced Apple Mug Cake

Serves 1

Ingredients

  • 35g gluten free plain flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • 1 tablespoons caster sugar
  • 2 tablespoons apple sauce
  • 3 tablespoons dairy free milk
  • 1 teaspoon olive oil
  • 1 scoop dairy free vanilla ice cream

Directions

  1. Stir together all the ingredients in a microwavable cup
  2. Microwave for 1 minute 45 seconds (800W)
  3. Serve with dairy free ice cream and a dusting of ground cinnamon

Gluten and Dairy Free Apple & Cardamom Muffins

Makes 8 muffins

Ingredients

  • 150g dairy free spread
  • 150g caster sugar
  • 3 eggs
  • 150g gluten free self raising flour
  • 2 medium sized apples, peeled, cored and diced
  • 1 teaspoon ground cardamom

Method

  1. Preheat the oven to 180 oC
  2. Line a muffin tray with paper cases
  3. In a large bowl beat together the dairy free spread and caster sugar until light and fluffy
  4. Beat in the eggs one at a time
  5. Stir in the flour, apple pieces and cardamom
  6. Divide between the 8 muffin cases
  7. Bake in the oven for 20 minutes
  8. Allow to cool before serving

Evening everyone

This is the second last seasonal post in my run of Halloween and Bonfire Night inspired posts.  If you are having a Bonfire Night party or even just a cosy evening in then this drink is the perfect thing to warm everyone up.  Fresh apples sweetened with a little maple syrup with a whole lot of flavour from the cinnamon, cloves, oranges and lemon.  I made this recipe when I had friends staying last weekend and it was very popular.  I think this will become a staple in my house over the winter.

This drink is:

  • a real winter warmer
  • packed full of juicy apples
  • amazing smelling
  • perfect for a Bonfire Night party

Tomorrow I’ll post my recipe for gluten and dairy free brownie S’mores pie and I’m also off to try a restaurant that has started serving gluten free fish and chips so I’ll feed back on that as well.

Gluten and Dairy Free Hot Mulled Apple

Ingredients

  • 1 litre apple juice or 8 apples juiced
  • 2 tablespoons maple syrup
  • 4 cinnamon sticks
  • 4 cloves
  • 2 slices of orange, cut into quarters
  • 2 slices of lemon, cut into quarters

Method

  1. Place the apple juice, maple syrup, cinnamon sticks, cloves, oranges and lemons in a large saucepan
  2. Heat gently for about 10 minutes
  3. Discard the cinnamon sticks, cloves, oranges and lemons
  4. Pour carefully into mugs and enjoy

Gluten and Dairy Free Zingy Apple and Ginger Shot

Description

I had breakfast in a little cafe and they served an apple and ginger shot before the food. It is supposed to aid digestion and help settle any inflammation. I’m not sure if that is true or not but it tasted great so I’ve had a go at making them at home.
