Gluten and Dairy Free Shot Glass Strawberry Cheesecakes

Description

Final recipe in the afternoon tea collection, thought I would add something a bit different and went for a gluten and dairy free cheesecake served in a little shot glass.

Ingredients

For the base:

  • 75g gluten and dairy free digestive biscuits
  • 25g dairy free spread
  • 2 teaspoons golden syrup

For the cheesecake:

  • 150g dairy free cream cheese
  • 30g caster sugar
  • 1 tablespoon lemon juice
  • 100ml dairy free cream

For the topping:

  • 12 strawberries

Method

  1. Melt the dairy free spread and golden syrup together in a small saucepan or in the microwave
  2. Crush up the digestive biscuits, I do this by putting them in a freezer bag and bashing them with a rolling pin
  3. Mix the melted dairy free spread, syrup and crumbs together
  4. Divide between six shot glasses and press the mix down firmly
  5. Chill in the fridge for 30 minutes
  6. To make the cheesecake cream combine the soft cheese, sugar, lemon juice and cream and whisk until thick and creamy
  7. Spread the creamy mixture over the biscuit base, smooth the top and chill in the fridge for a couple of hours
  8. Blend 6 of the strawberries to make a juice, place one of the remaining strawberries in each shot glass and top with the strawberry juice

Gluten and Dairy Free Mini Victoria Sandwiches with Chocolate Cream

Description

Technically this is cheating a little as it isn’t a new recipe, its the same sponge mix as my victoria sandwich but rather than making a large cake with strawberries and cream I’ve made four mini cakes with chocolate cream.

Ingredients

For the sponge:

  • 125g dairy free spread
  • 125g caster sugar
  • 2 eggs
  • 115g gluten free self raising flour
  • 1/2 teaspoon xanthan gum
  • 1/2 teaspoon baking powder
  • 2 tablespoon dairy free milk

For the chocolate buttercream:

  • 65g dairy free butter
  • 100g icing sugar
  • 25g dairy free cocoa powder

Method

  1. Preheat the oven to 180 oC
  2. Cream the butter and sugar together for a couple of minutes until light and fluffy
  3. Add the eggs one at a time, beating well after each addition
  4. Add the flour, xanthan gum, baking powder and beat well to combine
  5. Add the milk and mix in
  6. Line an 8 inch round baking pan
  7. Pour the cake mix into the baking tin
  8. Smooth out the top of the cake with a spatula
  9. Place in the oven and bake for 25 minutes
  10. Remove the cake from the oven and cake pan and allow to cool on a wire rack
  11. To make the buttercream beat the butter, cocoa and icing sugar together until light and fluffy
  12. Using a cookie cutter, cut out four small cakes
  13. Slice the mini cakes in half and fill with the chocolate buttercream

Gluten and Dairy Free Lemon Cream Pancakes

Description

It is difficult to find a dairy free substitute for whipped cream but I’ve started using soya whip. These pancakes have a lovely fresh lemon flavour which compliments the creamy topping.

Ingredients

  • 100g gluten free self raising flour
  • 1 egg
  • 1 tablespoon caster sugar
  • 100ml dairy free spread
  • dairy free soya whip cream
  • 1 lemon, juiced and zested

Method

  1. Whisk together the flour, sugar, egg, milk and lemon juice until it forms a smooth, thick batter
  2. Drop tablespoons into a frying pan and cook for a couple of minutes on each side of over a medium heat
  3. Allow to cool
  4. Top with the soya whip and sprinkle on a little lemon zest

Gluten and Dairy Free Apple and Cinnamon Scones

Description

I made these scones as part of my post on how to make a gluten and dairy free afternoon tea and I didn’t want to use strawberry jam as I already had a strawberry cheesecake. Instead I did a twist on the normal sultana scone using apple pieces dusted in cinnamon instead and topping with apple sauce and cream.

You can easily convert this recipe back into a ‘normal’ scone by removing the cinnamon and substituting the apple pieces with sultanas.

Ingredients

  • 100g ground rice
  • 175g rice flour
  • 50g self raising gluten free flour
  • 4 teaspoons baking powder
  • 2 teaspoons xanthan gum
  • 4 tablespoons caster sugar
  • 100g dairy free spread
  • 100g apple, peeled, cored and slice into small cubes
  • 2 teaspoon ground cinnamon
  • 2 eggs
  • 150ml soya natural yoghurt

Method

  1. Preheat the oven to 220 oC
  2. Place the three types of flour, the baking powder, xanthan gum and caster sugar into a large bowl
  3. Cut the butter into small pieces and rub into the dry ingredients until the mixture resembles bread crumbs
  4. Toss the apple in the cinnamon and add to the crumb mix
  5. Whisk the two eggs and the natural yoghurt together
  6. Add the egg and yoghurt mix into the bowl with the flour and butter
  7. Mix together until a soft dough is formed
  8. Shape into 6 scones and place on a baking tray
  9. Brush with any leftover egg and yoghurt mix
  10. Bake for about 15 minutes, until golden brown
  11. I topped mine with apple sauce and soya whip cream

Gluten and Dairy Free Afternoon Tea

Everyone deserves a little treat now and again so I thought I would have a go at making a complete gluten and dairy free afternoon tea. I understand that not everyone has the time, or desire, to be making a recipe with as many elements as this one. I’ve tried to keep the recipes simple but I’ve also uploaded them individually so you can just choose to make one of the recipes if you are short on time.

Gluten Free Scones

I made these scones as part of my post on how to make a gluten and dairy free afternoon tea and I didn’t want to use strawberry jam as I already had a strawberry cheesecake.
