Gluten, Dairy and Yeast Free Sugar Donuts

When I was looking through my recipes I realised I didn’t have a plain sugar donut recipe – I have apple, chocolate, jam and peanut butter but no sugar so here it is. As far as I’m concerned there are two basic types of donut – the bread type and the cake type. The cake time is quicker to make as they don’t contain yeast so there is no proving time.
You can pick whether you want to fry or bake these.
80g dairy free spread
110g caster sugar
1 egg plus 1 yolk
180ml dairy free milk
500g gluten free self raising flour
1 teaspoon xanthan gum
Beat the dairy free spread and caster sugar until light and fluffy
Beat in the eggs and milk
Stir in the flour and xanthan gum
Roll out to a few centimetres thick and cut out 12 circles
Use a smaller cutter to make a hole in the middle
Heat some oil in a high sided pan until it reaches 180 oC
Cook for a couple of minutes on each side
Alternatively you can bake these donuts for 12 minutes at 180 oC
