Gluten, Dairy & Yeast Free Quick Cheese and Onion Bread

Description

There is nothing better than freshly baked bread but sadly the reality of the situation is that I rarely have time to make it from scratch. All that time waiting about on yeast to active and the dough to double in size, I know I could use a bread maker but for some reason I always seem to get a better bread making it by hand.

This recipe came from me experimenting with non-yeasted bread, I’ve used plain flour and baking powder to get the rise which means it can be baked immediately – so if you are short on time or can’t have yeast then this recipe is for you!.

Ingredients

  • 315g gluten free plain flour
  • 2 teaspoons baking powder
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • good pinch of black pepper
  • 1 teaspoon mixed herbs
  • 100g dairy free cheese, grated
  • 1 medium onion, finely diced
  • 2 eggs
  • 185ml dairy free milk
  • 55g dairy free spread, melted

  1. Preheat the oven to 180 oC
  2. Grease and line a loaf tin
  3. Place the diced onion and a little olive oil in a shallow pan over a medium heat
  4. Gently saute the onion until soft, about 5 minutes
  5. Place the flour, baking powder, xanthan gum, salt, pepper and mixed herbs in a large bowl
  6. Stir in the onion and grated cheese
  7. Beat together the eggs, milk and dairy free spread
  8. Mix into the flour until you have a soft dough
  9. Spoon into the loaf tin
  10. Bake in the centre of the oven for 45 minutes
  11. Remove from the tin and allow to cool completely before slicing
