Gluten, Dairy & Yeast Free Bread

A super quick bread recipe free from gluten, dairy and yeast.

Tastes amazing fresh from the oven, still a little warm with some raspberry jam.




  • 420ml dairy free milk
  • 5 teaspoons lemon juice
  • 1 egg, beaten
  • 520g gluten free bread flour
  • 2 tablespoons caster sugar
  • 2 teaspoons xanthan gum
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 65g dairy free spread


  1. Preheat the oven to 210 oC
  2. Lightly grease a 9″ cake tin
  3. Stir the lemon juice into the dairy free milk and set aside for 5 minutes, this makes dairy free buttermilk
  4. In a large bowl add the flour, sugar, xanthan gum, baking soda and salt, stir until well combined
  5. Rub in the dairy free spread until it resembles breadcrumbs
  6. Pour in the buttermilk and beaten egg
  7. Mix until stiff dough forms
  8. Knead for 1 minute
  9. Shape into a ball and place in the baking tin
  10. Bake for 55 minutes
