Ingredients
- 2 salmon steaks
- 500g sweet potatoes, peeled and cut into chunks
- 1 small onion, finely diced
- 1 small red chilli, deseeded and finely chopped
- 1 garlic clove, minced
- salt and pepper for seasoning
Method
- Preheat the oven to 180 oC
- Season the salmon steaks with salt and pepper
- Bake in the oven for about 12 minutes
- Remove from the oven, remove the skin and flake into chunks
- Boil the sweet potato chunks for about 15 minutes in a pan of salted water
- Drain away the water and mash the potatoes
- Gently fry the diced onion, garlic and chilli for about 3 minutes
- Mix together the flaked salmon, sweet potato and onion mix
- Season to taste with salt and pepper
- Shape into 4 small patties
- Gently fry in a shallow pan for about 5 minutes on each side
