Gluten & Dairy Free Sweet Chilli, Tomato & Sweet Potato Soup

Ingredients

  • 1 tbsp olive oil
  • 1 tsp ground ginger
  • 2 onions diced
  • pinch of chilli flakes
  • 2 garlic cloves minced
  • 400 g can of chopped tomatoes
  • 250 g fresh tomatoes chopped
  • 650 g sweet potatoes peeled and chopped
  • 250 ml dairy free milk
  • 750 ml vegetable stock
  • 2 tbsps sweet chilli sauce
  • salt and pepper for seasoning

Instructions

  • Add the olive oil to a large pan over a medium heat
  • Stir in the onions, chilli flakes, garlic and ground ginger
  • Saute for 5 minutes
  • Add in the tomatoes (canned and fresh) and sweet potatoes
  • Pour in the dairy free milk and vegetable stock
  • Bring to the boil and simmer for 20 minutes
  • Stir in the sweet chilli sauce and season to taste
  • Blend and serve
