Gluten and Dairy Free Super Quick Microwave Chocolate Banana Pudding

I’ve never really used the microwave for baking so thought I would give it a try. Everyone is so busy nowadays it can be difficult to find the time to make dinner from scratch never mind dessert.

This dessert is gluten and dairy free and is super quick to make as you can mix all the ingredients in the dish you cook it in and it only takes 8 minutes in the microwave. The result is a moist, chocolaty banana pudding.


  • 100g dairy free spread
  • 2 ripe bananas
  • 60g brown sugar
  • 30g dairy free cocoa powder
  • 70g gluten free plain flour
  • 70g dairy free dark chocolate chips
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 teaspoons gluten free baking powder
  • 1 teaspoon xanthan gum
  • 2 eggs

  1. Place the butter in a microwavable 1 litre casserole dish and microwave for 45 seconds
  2. Mash one and a half of the bananas into the butter in the casserole dish
  3. Stir in the brown sugar, cocoa powder, plain flour, chocolate chips, cinnamon, nutmeg, baking powder, xanthan gum and the eggs
  4. Slice the remaining half banana and place on the top of the cake batter
  5. Sprinkle with a little extra nutmeg and cinnamon
  6. Cook in the microwave for 8 minutes
