Gluten and Dairy Free Spiced Pumpkin and Oat Pancakes

These pancakes taste very hearty and wholesome due to the addition of the pumpkin puree and gluten free oats. A perfect use for that leftover Halloween pumpkin.





  1. Place all the ingredients into a large bowl and mix until it forms a thick batter
  2. Heat a little olive oil in a frying pan on a medium heat
  3. Place about 2 tablespoons of mix into a thick disc shape
  4. Cook for about 2 minutes on each side
  5. Serve with maple syrup, a bit of dairy free spread and a sprinkle of cinnamon
