Gluten and Dairy Free Spiced Pear Sponge

This cake can be served either hot or cold, I usually have it warm with custard for dessert and then serve any leftovers cold. The sweetness of the pears are perfectly complimented by the warming spices in the sponge cake.   • 150g dairy free spread
  • 150g caster sugar
  • 3 eggs
  • 150g self raising gluten free flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 3 pears, peeled, cored and halved


  1. Preheat the oven to 180 oC
  2. Grease a 6″ cake tin
  3. Place the pear halves into the bottom of the cake tin
  4. Beat together the caster sugar and the dairy free spread until light and fluffy
  5. Add the three eggs individually, beating well between each addition
  6. Mix in the flour, cinnamon, ginger and nutmeg
  7. Pour our the pears and bake in the oven for 35 minutes
  8. Remove from the oven and allow to cool for 5 minutes then invert onto a plate so the pears are on top
