Gluten and Dairy Free Spiced Honey Cake

Description

You can probably gather from the amount of recipes on the website that I make a lot of cake! I’m always after new recipes – this cake is loosely based on a traditional Jewish cake that is made from cold tea and honey. The cake is moist and sticky due to the honey and goes lovely with some dairy free custard for the ultimate winter warmer pudding.

Ingredients

  • 150g brown sugar
  • 1 egg
  • 280ml tea (made up with 2 teabags)
  • 150ml vegetable oil
  • 180g honey
  • 330g gluten free self-raising flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg

Method

  1. Preheat the oven to 160 oC
  2. Grease and line an 8″ cake tin
  3. Mix the sugar, egg, tea, oil and honey together in a large bowl
  4. Stir in the flour, cinnamon, ginger and nutmeg
  5. Pour into the cake tin and bake for an hour
  6. Remove from the oven and cake tin
  7. Allot to cool before slicing
