Gluten and Dairy Free Spiced Carrot Buns

This is a really simple recipe for some spiced carrot buns. I love my cakes but sometimes it is nice to just have a plain bun rather than something covered in icing. These buns can be made relatively quickly and frozen for when you need them. They are great to pop in pack lunch boxes or just to enjoy with a cup of tea in the afternoon.





gluten free spiced carrot buns

  1. Preheat the oven to180 oC
  2. Beat together the caster sugar and the dairy free spread until light and fluffy
  3. Add the three eggs individually, beating well between each addition
  4. Add in the flour, xanthan gum, cinnamon, ginger and nutmeg
  5. Mix until well combined
  6. Stir through the grated carrot
  7. Split the mixture between 12 cupcake moulds lined with paper cases
  8. Bake in the centre of the oven for 20 minutes
  9. Remove from the oven and allow to cool
