Gluten and Dairy Free Spiced Banana Gingerbread

Spiced Banana Gingerbread

Ingredients
  

  • 115 g soft light brown sugar
  • 275 g gluten free self-raising flour
  • 3 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • 1/4 tsp ground nutmeg
  • 60 ml sunflower or olive oil
  • 60 ml honey
  • 2 eggs
  • 60 ml fresh orange juice
  • 3 bananas mashed
  • 115 g sultanas
  • 1 tbsp icing sugar

Instructions
 

  • Preheat the oven to 180 oC and line an 8" baking tin or bundt pan
  • Beat together the eggs and oil
  • Stir in the honey and orange juice
  • Add the sugar, flour, ginger, nutmeg and cinnamon
  • Mix well to combine
  • Stir in the mashed bananas and sultanas
  • Pour into the cake tin and bake in the centre of the oven for 45 minutes
  • Remove from the oven and allow to cool completely
  • Dust with the icing sugar before serving
