Gluten and Dairy Free Spiced Apple and Raisin Muffins

This muffin is right up my street as I absolutely love the taste and smell of cinnamon. These muffins smell amazing as you start by cooking the raisins, apple and spices together in a pan filling the kitchen with a lovely aroma. The muffins themselves are very moist from the juicy raisins and grated apples. Perfect anytime of the day.
280ml water, boiled
115g dairy free spread
200g caster sugar
2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon ground ginger
1 medium apple, peeled and grated
240g gluten free self raising flour
1 teaspoon xanthan gum
In a medium sized saucepan, add the raisins, boiling water, dairy free spread, cater sugar, cinnamon, nutmeg, ground ginger and grated apple.
Bring to the boil and allow to simmer for 12 minutes, remove from the heat and allow to cool
Preheat the oven to 190 oC
Bet the egg into the cooled mixture and stir in the flour and xanthan gum
Spoon into muffin tins and bake in the centre of the oven for 25 minutes
Allow to cool for 5 minutes then remove from the muffin tins
