Gluten and Dairy Free Snickers Style Bars

This recipe is definitely best kept for when you a fancy an occasional sugary treat! Sometimes I just crave an ordinary chocolate bar and on Saturday I really fancied a Snickers so I set about trying to make one that was both gluten and dairy free. I wasn’t sure how to go about making nougat so I’ve cheated a bit and used melted marshmallows.




For the chocolate coating:

  • 300g dairy free chocolate
  • 120g peanut butter, crunchy or smooth

For the nougat layer:

  • 200g gluten free marshmallows
  • 100g peanut butter, crunchy or smooth
  • 20g dairy free spread

For the caramel layer:

  • 200g caster sugar
  • 150ml dairy free cream
  • 120g golden syrup
  • 55g dairy free spread
  • 75g peanuts


  1. Place half the chocolate and peanut butter in a bowl over a pan of boiling water
  2. Stir until melted
  3. Pour into the bottom of a lined 6″ square baking tin or into individual mini loaf tins
  4. Place in the fridge to set while you make the nougat layer
  5. Place the marshmallows, dairy free spread and peanut butter in a small saucepan and heat gently until melted and well combined
  6. Spread over the chocolate mix and return to the fridge
  7. Make the caramel by placing the sugar, cream, syrup and dairy free spread in a small pan
  8. Heat gently until the sugar and spread dissolves then bring to the boil and continue to cook until it reaches 120 oC
  9. Remove from the heat and stir in the peanuts
  10. Pour over the nougat layer
  11. Return to the fridge to set, about 30 minutes
  12. Melt together the remaining dairy free chocolate and peanut butter
  13. Pour over the caramel layer and allow to set in the fridge
  14. Remove from the fridge and cut into squares
