Gluten and Dairy Free Prawn Tikka Masala
serves / makes 4 20 prep time 20 mins cooking time
I’m in my first day back from holiday slump – got lots of washing to do and the usual post holiday unpacking. Instead of actually doing that I’m uploading recipes, thinking what cake I could bake today for the website and planning a little trip out for lunch.

1 tablespoon olive oil
2 garlic cloves, minced
4 tablespoons tikka masala paste
1 onion, finely diced
400g prawns, shelled and peeled
400g can of chopped tomatoes
150ml dairy free cream
salt and pepper for seasoning
Gently heat the olive oil in a large shallow pan over a low heat
Add the garlic and onion and saute for 5 minutes
Add the prawns and cook for a further 2 minutes
Stir in the tikka paste and cook for a minute
Pour in the chopped tomatoes and simmer uncovered for 10 minutes
Stir in the cream and season to taste with salt and pepper
