Gluten and Dairy Free Pizza Style Savoury Muffins

As someone who has a sweet tooth I was never sure about the idea of savoury muffins. I decided to give them a try to accompany some homemade tomato soup and this is the recipe I came up with.

The goal was to combine my favourite pizza topping items into a muffin and hope it would taste like a pizza. Feel free to change what you would put into your muffins, the combinations are endless. If you don’t have dairy free cheese just top them with some ham, onion and herbs.




  • 315g gluten free self raising flour
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • pepper, to taste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 tablespoon sugar
  • 6 sundried tomatoes, chopped finely
  • 1 onion, diced finely
  • 100g pancetta, cubed
  • 1 clove of garlic, minced
  • 1 egg, beaten
  • 350ml dairy free milk
  • 1 handful of dairy free grated cheddar cheese


  1. Preheat the oven to 190oC
  2. Gently cook the pancetta, onion and garlic in a shallow pan over a medium heat in a drizzle of olive oil for about 5 minutes
  3. Place the flour, xanthan gum, salt, pepper, basil, oregano, sugar, chopped tomatoes, onion, pancetta and garlic in a large bowl
  4. Mix in the egg and dairy free milk
  5. Line muffin tins with 12 cases and spoon in the mixture
  6. Top with a sprinkle of the grated cheese and some extra bass or oregano if you wish
  7. Cook in the centre of the oven for 20 minutes
  8. Best eaten while hot
