Gluten and Dairy Free Peanut Butter Choc Chip Cookie Sandwiches

Perfect little treat sized gluten and dairy free peanut butter and chocolate chip cookies. I’ve sandwiched some of these cookies together with peanut butter and the rest with dairy free chocolate spread. You can buy a dairy free chocolate spread such as Plamil from your local health store.




For the cookies:

  • 65g caster sugar
  • 65g brown sugar
  • 65g peanut butter
  • 30ml dairy free milk
  • 30ml vegetable or olive oil1 teaspoon vanilla extract, optional
  • 1 egg
  • 150g gluten free plain flour
  • 1 teaspoon xanthan gum
  • 1 teaspoon baking powder
  • pinch of salt
  • 60g dairy free dark chocolate chips

For the filling:

  • 1 tablespoon dairy free chocolate spread
  • 1 tablespoon peanut butter

  1. Preheat the oven to 180 oC
  2. Beat together the caster sugar, brown sugar, peanut butter, milk, oil, vanilla extract and egg
  3. Stir in the flour, xanthan gum, baking powder, salt and chocolate chips
  4. Line 2 baking sheets with parchment paper
  5. Place teaspoons of the mixture on the baking sheets, allowing room for the cookies to spread
  6. Bake for 15 minutes
  7. Allow to cool completely
  8. Sandwich the cookies together with either peanut butter, chocolate spread or both!
