Gluten and Dairy Free Nachos

Description

I love Mexican food but just the thought of all that sour cream, flour tortillas, cheese etc can be enough to churn the stomach of anyone having to follow a gluten and dairy free diet.

I’ve pulled together a quick recipe that is a fresh alternative take on nachos.

Ingredients

  • 150g gluten and dairy free tortilla chips or make your own
  • 2 chicken breasts, diced
  • 1 onion, diced
  • 1 red pepper, diced
  • 1 garlic clove, minced
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon oregano
  • 1 teaspoon ground cinnamon
  • 1 lime, juiced
  • 1/2 tablespoon sugar
  • 1 large ripe avocado
  • 2 teaspoons dairy free natural yoghurt or mayonnaise
  • Handful of cherry tomatoes
  • Salt and pepper, for seasoning

Method

GF DF Nachos

  1. Make the fajita marinade by combining the garlic, cayenne pepper, oregano, cinnamon, lime juice and sugar in a large bowl
  2. Add the diced chicken and stir until coated
  3. Season with salt and pepper
  4. Heat a drizzle of olive oil on a high heat in a large frying pan
  5. Add the chicken and cook for 5 -10 minutes
  6. Add in the diced onion and peppers and cook for a further five minutes
  7. Arrange the tortilla chips in a large bowl or plate
  8. Place the chicken on top of the chips
  9. Half the cherry tomatoes and season with salt and pepper
  10. Place on top of the cooked chicken
  11. Slice the avocado and place on top of the tomatoes
  12. Drizzle with the dairy free natural yoghurt or mayonnaise
