Gluten and Dairy Free Mint Crunch Brownies

I do like a good sticky brownie which probably explains why I have quite a few brownies recipes on here already but hey there is always room for one more. This time I’ve decided to go for mint crunch, if you can’t be bothered crushing up the mint sweeties then replace them with some peppermint extract, you’ll get the same flavour without the crunch.





  1. Place the mint sweets in a small freezer bag and hit with the back of a spoon until you have small pieces of mint
  2. Preheat the oven to 150 oC
  3. Melt the chocolate either in the microwave or in a bowl over a pan of boiling water
  4. Beat together the caster sugar and dairy free spread until light and fluffy
  5. Add in the eggs and beat until well combined
  6. Stir in the melted chocolate, plain flour, self-raising flour and crushed mints
  7. Line a traybake tin with tinfoil
  8. Pour in the brownie mix
  9. Bake in the oven for 30 minutes
  10. Allow to cool in the tin for 1 hour
  11. Remove from the tin and allow to cool completely before slicing into 9 squares
