Gluten and Dairy Free Marble Cake

For the plain sponge:

For the chocolate sponge:

For the chocolate buttercream:


  1. Preheat the oven to 180 oC
  2. Make up the plain and chocolate sponges in two separates bowl, as follows
  3. Cream the butter and sugar together for a couple of minutes until light and fluffy
  4. Add the eggs one at a time, beating well after each addition
  5. Add the flour, cocoa powder (for the chocolate sponge), xanthan gum, baking powder and almonds and beat well to combine
  6. Add the milk and mix in
  7. Line two 8 inch round baking pans
  8. Place alternate spoonfuls of plain and chocolate mixture into the baking pans
  9. Swirl the mixture with a knife to create the marble effect
  10. Smooth out the top of the cakes with a spatula
  11. Place in the oven and bake for 20 minutes
  12. Remove the cakes from the oven and cake pans and allow to cool on a wire rack
  13. To make the buttercream beat the butter, cocoa powder and icing sugar together until light and fluffy
  14. Use the butter cream to sandwich the two cakes together
