Gluten and Dairy Free Grilled Coriander and Lime Chicken

The smell of the fresh coriander marinade is amazing and the best part of making this recipe. I decided to experiment with blending fresh herbs with a variety of other flavours to make super fresh marinades. This one combines fresh coriander with the zestiness of the lime juice and is balanced with other tastes such as chilli and garlic. I served this chicken on a gluten free tortilla wrap but it would be perfect in a salad or with some vegetable rice for a more substantial meal.




To serve:


  1. Place the coriander leaf, garlic, brown sugar, pepper, soy sauce, vinegar, lime juice, olive oil and chilli flakes in a blender
  2. Blitz until you have a smooth paste
  3. Pour over the chicken pieces and stir until well coated
  4. If you have time leave the chicken to marinade in the fridge for a couple of hours
  5. Heat a drizzle of olive oil in a shallow and and sir fry the chicken for 10 minutes or until cooked all the way through
  6. I served mine on a gluten free tortilla wrap with salad and balsamic glaze
